Cakes/wedding Desserts - Special diets - Brainstorm

So I have an autoimmune disease which is strongly triggered by processed sugars and grains. I have yet to find a bakery that does grain-free, sugar-free baking. My cousin has a severe nut allergy (main ingredient in many grain-free cakes) and my other cousin is a vegan. So lots of really specific diet things going on. It is most important to me to have something I can eat. I honestly feel like I will likely have to make my own dessert. But also, I'm thinking maybe we might have to have multiple desserts to accommodate our multiple dessert needs. I have two questions.

1) Would it sound ridiculous if I asked a bakery if they could decorate a dessert I made for myself, so that it would match the rest of the desserts?

2) What are your favorite non-cake dessert options? And also, What are the most attractive ways to set up if you have multiple desserts? Thanks.

    I don't know if a bakery would decorate something you make due to liability? Worth asking. I would just have a dessert table with clear signs of what each item contains, this is pretty common in this age! But yes, you are most important at your wedding, so if it only works out to have something for you, maybe just some fruit for the others with a chocolate fountain or something fun.

    I don't think a bakery would decorate something you made. It's risky both PR-wise and health-wise - if something you baked wasn't very pretty, or didn't taste very good, it still appears to be something they made to your guests. Also, if something went terribly awry, and someone got sick, there would be no way of determining whether it was something they did or something you did.

    As far as non-cake desserts, I, personally, love a good chocolate mousse.

    I'm not sure where you are or what bakery options you have, but I think you may have good luck with cupcakes? You could have separate section for grain free/sugar free for you (coconut sugar is usually a great sweetener option) and a section using regular flour or oat flour or something to accomodate your cousin? (unless they are so allergic they can't even be around nut flour or nuts in the room).

    I would reach out to bakeries you're interested and see what recommendations they have! Often places will be able to accommodate even if it's not listed on their regular menu.

    Another place to check might be cafe/restaurants in the area that you like? If they make accommodations for other food, they may be able to create or provide desserts or have suggestions for places to check.

    Non-cake options that may work for you all is a variety of chocolate covered fruit? strawberries and pineapple are always delicious and it's very easy to find refined sugar free chocolate!

    If I was in your place I honestly might do a sundae bar. I'm strictly keto/gluten free myself and I love Halo Top ice cream. You can get ice creams to fit everyone's dietary needs and the topping possibilities are endless. For my wedding I made dietary signs with Canva and dollar store frames, so that's an idea too.
