I would probably say cake because hand dipped ice cream can get pretty messy and I wouldn't be so into that if I were wearing a fancy dress. I do love hand dipped ice cream though!

Ummmm I would want both lol. Personally I am team cake vs team ice cream but cake and ice cream I would love you forever!

I am not especially fond of cake, but in formal clothes, I only want ice cream or pastries eaten with a spoon or fork. A staffed ice cream bar with toppings , not a truck. Especially in hot weather. For a casual meal is different. If you are going beach and barbecue, then a truck ice cream bar is fine. Skipping cake for choices of cheesecake, cannoli, baklava, pastries, chilled pies or ice cream in dishes at table, I would prefer, in dressy clothes in summer, with no sink at hand, no cone or novelty.

1000% ice cream truck! One of my cousins weddings had a candy bar and that was hardly eaten and such a waste. I would have preferred to offer our guests Costco cookies, but a cake was included with our venue.
We are at a time in life where food trucks are popular and typically so good. The speciality ones are the best, not the basic ones that offer hotdogs and burgers.

Ice cream truck is cute, different, and memorable. But, if I was at a wedding with no cake, I’d be sad. I love cake. I don’t think you can go wrong. Maybe offer a small cake if someone doesn’t want ice cream

We had an ice cream truck and it was so much fun! People were excited for it beforehand and loved it when it happened.

I LOVE the idea of the ice cream truck! Such a fun idea. I usually don't even remember the cake at a wedding, but an ice cream truck would definitely be a memorable high point.
