Cake frosting help

Alexis, on March 9, 2022 at 11:37 AM Posted in Wedding Reception 3 3
My wedding is outside at the end of july in Alabama. Were not going to have the cake sit out the whole time, but im still worried about the frosting melting. We tried buttercream and wedding cream cheese at our tasting and don't really notice a taste difference. What will last in the heat better?

Cream cheese frosting will do worse sitting out. Our wedding is in October with the desserts inside and our baker suggested we keep the cupcakes with cream cheese frosting in the fridge until the last possible moment. Double check with your baker to see what they recommend, but I'd say between those two buttercream will be the better choice.

I had buttercream icing at my backyard outdoor June wedding. The baker brought the cake from the bakery to our reception about 30 minutes before dessert was to be served so it didn’t have to sit out for long.

Non dairy whipped cream icing is best for hot temperatures. If that isn’t an option, regular buttercream is best. The best thing to do is set up the cake in a shady spot that has no sunlight to avoid melting issues.
