Buffet Style Dinner i Have Little To no Budget

I went totally over budget and I’m having a family friend who has started a home catering business make food she specializes in Southern/Soulfood
but I want something more fun AND nicer than fried chicken and MAC & cheese

Ex I love tacos and sushi but I can’t have that for dinner lol

There isn’t a Kitchen just a Small Area for buffet
HELP!

    What else does she offer? Is she servsafe certified? Food should have been one of the first expenses, since it is usually the biggest, but that ship has sailed.

    What else did you spend your budget on? Is there anything else you can cut.

    Venue/Food/Bar are usually the first things booked since that should be half your budget.

    id ask her what she can cook. I wouldn’t give her a menu of stuff she’s never cooked before

    As someone who didn't have much of an opinion on food for my own wedding, I genuinely think fried chicken and mac and cheese sounds delicious. Your guests are coming to celebrate you getting married and won't judge you for serving something less "fancy".

    These are two solutions I thought of:

    -You could talk to your friend about what else she can make that you'd prefer. Although, I certainly wouldn't look a gift horse in the mouth if she's giving you a good deal and I'd stick to what she's good at. She should be able to provide you with a menu to pick from.

    -People love food bars. You could ask her to make two or three mac and cheese blends with different types of cheeses/pasta shapes and a toppings bar (breadcrumbs, bacon, chicken, jalapeños, etc.). Same with fried chicken and dipping sauces. Or different buns or pulled meats. (I'm getting hungry now.)

    Ask about different options. I would her rather make something less fancy done well than having her attempt something outside of her skill set and do it poorly
