Boutonniere or pocket square

You can do both or just one. No wrong answer here.

My fh doesnt want them so we're just doing pocket squares

Hi Ashley! It's really up to you and your fiancé's preference! No wrong answers here. Have you asked your FH how he would feel about a boutonnière along with the pocket square? What kind of flowers are in your bouquet?

Technically, the correct fashion way of doing things is to pick one - not both. However, I don't think anyone really cares about that and I know my FH wants to do both so he is. It really is just up to his personal taste.

First-- regarding the boutonnieres, either way will look lovely. Adding boutonnieres is just adding a little extra finishing touch. It's not required and doesn't make or break the look. So really, completely up to you both.

Second-- Ohmygosh! Your flowers are GORGEOUS! I love this idea. You could definitely do a matching wood boutonnieres to match your bouquets if you do decide to go this route. Again though, completely your choice.
