Bolivian/Southern Catering

I know this is a long shot but have any of y'all had Bolivian food at your wedding? If so what did you have and was it easy? We're doing half Bolivian food and half southern and so far the easiest Bolivian thing I can think of to serve is salteñas! We're having both kinds of food to represent both of our families, but is it too different? Will those 2 together be too weird? Any advice is much appreciated!

    We've not yet found a caterer anywhere near our venue that does Bolivian food so my fiancé's family is probably going to end up making most of it.

    Don't self-cater. Your fiance's family should be able to relax and enjoy the wedding, and self-catering opens you up to all kind of liability issues. Talk to a professional caterer. A lot of them are willing to prepare special dishes if you provide recipes.

    Also, a lot of pro caterers are used to using quinoa, which is a staple of Bolivian food. Use a quinoa based dish for your vegetarian option or a quinoa side for your meats. And picante de pollo is really just spicy fried chicken, Any caterer should be able to work with you on that.
