Appetizer counts

I so appreciate this forum and all the advice I’ve gotten on here. Appetizer amounts? We have one hour during which will have cocktails and appetizers while we’re taking photos. There’s going to be six different types of appetizers. Two of those are included in the cost of the venue and I think they said it’s two pieces per person. I am adding four more different kinds of appetizers and I was going to do, one, per person. Except I have two vegans so I’m doing extra of the two vegan options since that is all they will have as far as apps. They will each have five apiece.
My concern is if I do one per person of the appetizers that I am adding, then anyone who maybe likes meat but doesn’t like beef or maybe they don’t like bacon then they’re really not getting one per person. they’re going to be stuck with just three or four appetizers instead. I feel like I just don’t know how to account for the fact that not everybody’s going to eat all the appetizers becuase maybe they don’t care for the choice. So, I can’t guarantee that it will be six per person. We really don’t want to spend any more money. We could add maybe one more appetizer on. So far the venue offers stuff Im not a fan off and it’s an odd combo. We have beef Wellington, coconut shrimp, a baked brie, bacon wrapped dates, fried artichokes and vegan tortilla wraps. Odd selection of choices in my opinion. The guest count is 55 with one strict vegan and one vegan/occasionally eats cheese so not strict and then myself who eats cheese. Does it seem like enough?
Also unfortunately because of Covid it is plate passed not tray passed. But it’s helpful since guests cannot just go pick multiple things multiple times and leave little for others. all the appetizer choices will be put onto a plate and handed to each person. The vegans will be the exception to that.

    Is this being catered because the caterer should know how much of each item?

    The venue makes all the food but anything I add, I tell them how many I want. They have weird rules. Dinner will follow, I forgot to add that. So apps and desserts i give the amount I want.

    This really seems like something the caterer should be able to organise / should know.

    Normally you would tell your caterer that you need enough for x amount of people including x y z dietary (i.e. 1 x gluten free, 2 x vegans etc) and they should then just supply enough food.

    As you're experiencing it is really tricky to work out how much people will actually eat without previous experience of organising similar events!

    If their guideline is 2 per person then I would ensure there is enough for 2 per person.

    The people with allergens/dietary requirements should be given their option first or it should be labelled as for these people only. Everyone else can then fight among themselves for the other options.

    So I think 5-6 pieces per person is plenty. And those that don't like certain things will either eat slightly less naturally (let's say the waiter with the one they want doesn't come around every moment), or they'll have an extra piece of the one they like. Honestly, it all works out. The only people I'd be concerned about would be the vegans as they have the fewest options, and you're planning for them.

    People won't be famished - it's 1 hour, with dinner to follow. If they ate less because they don't like the options, that's on them. They won't be able to complain that there wasn't food. They're just picky. If it was a longer break between ceremony and dinner, I'd be more concerned, but it's short. You're doing great! I've had to plan cocktail receptions before, so picking how many pieces isn't unheard of. Smiley smile You're doing well!

    Thank you Bridget. Yah this venue has its positives but it definitely has some downsides that add stress. Like they call the shots on everything and then on something’s like this they leave you swaying in the wind lol. Yes I agree, I’ve got my vegans covered and no other allergy issues. Thank you.

    Thank you for the reassurance Grace. I know you can’t worry about it all. And for sure it’s on the picky eaters if they don’t like stuff. The venue manages the timing and they are strict so 1 hour will be 1 hour for sure lol.

    So strange. Also as re you planning 1, 2 or 5 per person because all three numbers were mentioned so I wasn't sure.
