Suggestions for affordable, customizable invites? We're inviting 150ish people but only really expecting 100-120. Did people actually RSVP or did you have to call everyone and ask? Our wedding is in October 2019... When should the "deadline" be?

I think it would be fun to have a cocoa bar and some point after my ceremony since it's in the fall (like... Cocktail hour possibly? After dinner?) My MOH has Celiac's and can't have gluten. Any ideas for gluten free items to use? Fun toppings etc....
