For those who's venue did not come with a caterer, when choosing your caterer did you schedule a tasting? If so did you pay for the tasting? Is that the norm and if so what's a reasonable price that should be charged?

We found some catering options that are slightly over budget and realizing one area we could save is by switching from glass/china to fancy disposables. What are your opinions on that? Have you been to a wedding that has used them?
