Working with Doug and Erin was a breeze. We were trying to balance having quality locally sourced ingredients with a somewhat tight budget, and Erin really helped us get phenomenal value for the money. We had so many guests rave about how good the food was. The grilled trout in beurre blanc in particular was perfectly crispy and served skin up so it stayed that way during serving. I didn’t sample the braised beef myself, but I heard multiple rave reviews from guests. The grazing board was another highlight. It was beautiful, creative, and delicious. I couldn’t stop eating the blistered shishito peppers. The black garlic salad dressing was so well balanced and flavorful I wanted to put it on everything. Without our even asking, they made a few servings of a variation on the eggplant dish that was vegan, which was great, since we had a vegan guest who didn’t let us know about their dietary restriction. I could go on, but suffice it to say that every dish on the menu was a hit.

Doug, Erin, and crew showed up ahead of schedule, and communicated very well with other wedding vendors and our coordinator, while being really warm and easy to work with. During our last call before the event, Erin was incredibly professional and experienced. She helped us work through a lot of small details we hadn’t even thought of. Overall, we would highly recommend Niblack for your wedding or event! They went above and beyond.

We are so thrilled to have worked with Niblack for our wedding. They worked with us as we built our wedding plan, and they were wonderful partners in providing ideas not only for incredible food, but for how to ensure a successful event. The food was FANTASTIC. We received so many compliments from our guests. More than anything, the personal aspect of working with this team was what made all the difference. Their on-site team was so kind to our guests, family, and our sweet dog. This team truly cares for their clients and is invested in them having memorable and special experiences.

Niblack was great to work with in all categories. We had to change our venue and they were very accommodating in all our needs with location, set up, etc., and the food was great! Erin was very prompt and extremely helpful in all our questions and needs.

Working with Niblack Events was an absolute dream! We had them cater our micro wedding on the Oregon coast this April and could not have had a more perfect experience. A different caterer had unfortunately cancelled a bit last-minute so we desperately reached out to Niblack Events with only a few weeks until our big day. Thankfully, they were incredibly responsive, kind, and professional. And the food?! Outstanding. We had the most gourmet vegan and gluten-free meal possible, with enough leftovers to last us through the rest of our wedding weekend. I cannot recommend Niblack Events highly enough, they far exceeded any and all expectations we had, and were an absolute pleasure to work with.

The NiBlack team is INCREDIBLE. They brought so much creativity to our bar & appetizers — our guests loved everything. They went above and beyond to use local ingredients, make the presentation gorgeous, and their team is full of polite, friendly PROS. Highly recommend!

We absolutely loved working with Niblack Events! They helped create the wedding menu of my (gluten-free, dairy-free) dreams with the perfect play on Pacific Northwest flavors. My experience with Erin (the Operations Manager) was superb. From the first time I contacted Erin to the day of the event, she has been accommodating, helpful, and she answers all my questions and responds promptly to all my communications.
I was blown away by the quality and service of the food. Both the food and presentation were excellent! This was a lovely evening with a lovely table setting and an accommodating and professional staff. The service was impeccable. I also got to meet Doug! Awesome guy!

The whole team was amazing. From the first email sent to month after the event the level professionalism was amazing. They work with us and made are day special. There gave us no reason that we need to check up on them or worry once we made the plan for the day they executed it perfectly. We could of had the day we hade with out them.
