History

The creation of the St. Francis Star of the Sea Chapel was for a purpose far greater than just providing a beautiful wedding venue. Allowing guests a place to quietly sit amd meditate, they can contemplating the blessings of the Maker, as they emerse themselves in the serene countryside. Following many family traditions on both sides of the family, this historic venue continues a traditon of hospitality begun by Knolle Jersey Farms, (the world's largest Jersey herd for many years), as they welcomed school children, boy scouts, and hundreds of visitors to view "the Farm". Additionally, the chapel continues traditions begun by another grandfather of the owner of the Knolle Farm, (William Wittenburg), wherein a private, ranch chapel in central Texas provided a settng for mass for the family and employees for generations. Other traditions continue on today as they encourage, and pass onto guests, a respect of Mother Nature in many ways, including fine beef cattle, Knolle honey, artisan foods, olives, and farm to table cuisine, based on fresh vegetables and eggs from their large garden. This background of the best of rural / country lifestyles provides the basis for the purposes of Knolle Farm & Ranch, as they continue a committment to unwavering high standards, and warm Texas hospitality, at its finest!

We were under the impression that this venue would handle the majority of the hassles but as we discovered, that wasn’t the case, as we had to oversee & handle the majority of the wedding process ourselves, other than the few simple things they do. Though the venue is beautiful, & our wedding was awesome (thanks to our family, friends & DJ), the months we spent planning the wedding was more hassle than what it was worth. There were many things that we were charged for that didn’t include what they appeared to, such as set up & take down (we had to set up & take down our own decor); ice, yet it was demanded that our beverages come iced down; and a “wine hosting table”, which is just a wine table (no hosting about it as we had to uncork & pour our own wine). A few weeks before the wedding, we discovered that we were being charged a higher facility fee and tax than what was originally quoted to us on the venue’s policy form sent when we first inquired. Because we didn’t catch this in a timely manner, we were subjected to either paying or not having a wedding. Throughout the entire process, including the rehearsal & wedding day, the owner was incredibly unprofessional, rude, very disorganized, forgetful & most importantly absent. Often times, it was nearly impossible to receive responses from her concerning decisions/questions we had. When we did, they were misinforming and disorganized. The owner would often forget things we had discussed or that she had told us. She was also physically absent the day before & of our wedding. The only time we saw her was when we had to knock on her door & at the very end of the wedding, when she demanded we all leave, claiming there was a tornado warning (why she would force us out to drive on dark back roads during a dangerous storm, regardless of whether or not our time was up, makes no logical sense). She left no time for us to even gather our décor & barely any time for myself & bridesmaids to get our belongings, my dress included.

    Knolle Farm & Ranch's reply:

I have just joined Wedding Wire, after declining spending more on advertising for a number of years. But, the young lady who contacted us was so nice, and I felt like this was a good avenue for advertising our wonderful venue. With this said, I had never seen this review on Wedding Wire, nor have been able to comment on it accordingly, until now. Therefore, I feel it important to respectfully respond, not to argue a point, but, to defend a very hard earned reputation of 22 years, where we rarely have experienced any poor reviews from brides, who themselves, have enjoyed our facility, in person. With this said, I am saddened to see a review from 2+ years ago, from a seemingly unknown individual - a review that is not only very false and potentially damaging, but, that has been in place for a good time without our ability to reply. ( Such is sometimes the current nature of such things as social media & reviews on chosen advertising sights; although, I feel reviews should be entirely honest and made by a real client, vs. any potential hearsay. Additionally, I am very grateful that we have very rarely had a bad review, considering we have hosted near 600 weddings here, and still maintain a very positive reputation this many years later! ) This is a very disappointing scenario, in that we so rarely have problems or concerns, and certainly not of the sort that I am reading herein.
To address the allegations, as described, we do everything in our power to assure a stress free wedding experience, including, above all, the wedding day, We do have certain clearly itemized jobs, and do state specifically that we do not set up a bride's personal decor, as it can be such a matter of unknowns, and a serious source of disorganization for our staff on wedding day. We do, though, take care of all of the set up/ tear down, etc. of our services, and, in fact, would not allow others to do such. We therefore, specifically state that we are not responsible for a bride's personal supplemental decor, and ask to be consulted with on any potential decor prior to wedding day, to allow us all to know how to plan.
As far and unknown or changing costs, from the outset we very carefully agree upon an itemized legal contract, which binds us to an agreed upon cost, and we cannot, (nor do we ever), change those costs unless a bride chooses to increase her costs, or requests additional numbers of guests, or services. We are legally bound by this contract, as is a bride. This is not a matter of us choosing to increase costs, or organization or disorganization, as duties are clearly outlined and agreed upon; although, I think the great majority of brides here would agree that we provide far more than is contracted for. I have though, seen a pattern of brides failing to read, ( or refer to), their contracts, as so many are attempting to do so over such things as cell phones, vs. hard copies of signed agreements, and this pattern can be difficult for all to keep up with agreed upon costs and services.
On wedding days, brides may not see me a lot, unless they have specific needs for me, in which case I never have left the grounds on wedding day for any wedding. I am, instead, so deeply entrenched behind the scenes, in working with my staff and overseeing all facets of the wedding, to be sure it is as perfect as possible. Sadly, I may look a bit ragged, in work clothes, as I jump in with my staff doing everything from helping w/ flowers, to cakes, checking foods, decor, and so much more! If a bride ever personally needed me, I am present at all times on wedding day, to meet any and every need; but, there may not see me often, unless requested. ( I might not be especially "presentable" to guests on wedding days and her guests are not here to meet me; they are here to attend a beautiful wedding and see a gorgeous bride, and we are here to provide exactly that experience.)
We do request that guests clear the property @, or soon after the agreed upon end of the wedding, as security is required to stay until grounds are cleared. The only incidence of anything similar to this situation arising, was about 9 years ago, when we did see on the weather station, an impending severe weather alert that was nearing our property, ( about 45 minutes away). It was 30+ minutes past the end of the wedding and at the time, many guests were still on the property, continuing to party, and there were a number of cars parked in an adjoining pasture, (including a large bus). In this case, all guests did need to clear the property and vehicles be moved, lest they be stuck in the mud, with potential problems occurring with this situation. Hence, after a number of warnings, the security personnel did have to strongly request that guests leave the property.
All in all, it has been a very rare instance that I have had to respond to allegations of the sort, and I believe that these sorts of reviews which can be posted without solid proof of such, are often very detrimental to hard working business owners, such as ourselves, who open our homes and lives to guests, in an effort to share what we have and to bring joy to their lives, and that of their guests. We truly are very blessed, indeed, to have enjoyed touching so many lives and we intend to continue to do so for many years forward. Thank you to all of you who took the time to read this, and I hope to meet many of you in the future. Please address any questions you might have to us @ knollefarm@gmail.com, and have a wonderful 2019. Happy New Year to all!
