With over twenty years as a photographer, Ivan Apfel began his career as a documentary photographer. His images have appeared on the front pages of newspapers and magazines published around the world. In 1997 one of his friends convinced him to document her wedding the way he has his previous subjects. This changed his whole outlook on documentary photography. In his past subjects, it was a benefit to remain removed from the subject he was covering. In documenting a wedding, he found it was the opposite. The more he allowed himself to become emotionally connected with the bride and groom, the more successful his images were. He has been addicted to documenting weddings ever since.

Since then, Ivan Apfel has also worked with commercial photographers developing his skills at mixing natural light and controlled studio lighting. This has allowed him to created natural bridal and bride and groom portraits with a commercial editorial look to them.
