Edelweiss was recommended to me by my cater. "It's the best cake you'll ever eat," he said, "and it's a total steal."

He was right. For $350 (with delivery), I fed 100 people with the most delicious cake I've ever eaten. It was moist but not too moist, and the flavor was excellent. In full disclosure, I wasn't super concerned about the exact way the cake looked, but it was incredibly beautiful.

I would highly recommend Edelweiss, if only so you can go taste all the cakes!!

We have ordered from Edelweiss before for small personal treats and for my brother-in-laws wedding cake several years back (fresh fruit cake). After cake tasting at several different European bakeries we decided on Edelweiss, as their samples were yummy and pricing was competitive. The cake tastings were great and we went with their mango mousse flavor as the lady there suggested that would stand the test as far as a fruit filled cake that would not go soggy on our guests when it was time to eat. Prior to our wedding we decided to order a birthday cake for our mom as a surprise to our family as a way to show great our wedding cake would taste. Sadly, the birthday cake we ordered was not to our liking as it was too sweet. The owner himself, Jerry was great and talked with me about why the flavor might have been off -a ordering snafu on my behalf as I was informed I ordered the wrong icing. He offered another birthday cake for free. The 2nd cake definitely tasted more like the Edelweiss baked goods we have come to love and appreciate. Well our wedding cake was delicious and beautiful! I can’t thank you enough Edelweiss! Your cakes are yummy and our customer service is excellent. We look forward to having future cakes made by you.

Edelweiss was amazing. We had two incredibly cute mini wedding cakes, 1 grooms, 1 for cutting. The grooms cake was Lemon Lilly flavored (lemon cake, lemon curd & raspberry preserve filling, butter cream fosting. IT WAS AMAZING. The second (my cake :) was Kahlua chococalte mouse, chocalate cake with butter cream frosting. SO GOOD. The qualoty of ingredients, and the flavor of these cakes was so incredible. We received so many compliments. Please consider this super cute bakery in downtown Prior Lake for your sweets and treats!!!

What a great experience! We were looking for a small town bakery that would make us a small cake. We came across this bakery and went in for a cake tasting. The cake was delicious and they worked with us to get the size and price we wanted. We were very happy with our cake!

We were so pleased with everything about this bakery from the variety of options at the tasting to having our cake match our invites to the free small version of our cake on our 1 year anniversary.
I have recommended this bakery to so many people. The guests at our wedding still talk about our cake, it was that good.

First I would like to thank Edelweiss for giving me a beautiful, delicious cake for my wedding! The reasons why I couldn't rate them five stars was because they don't do custom cakes, you only get to choose your cake from a catalog. ( The reason why I didn't go with another bakery was because the wedding package I paid for with Flagship was paying for my wedding cake through this bakery only); but I was pleased that they let me tweek some of the design elements on the cake I chose and I loved the flavors of cake and fillings they had to choose from.

While planning my wedding, my aunt suggested that we use a bakery that she goes to quite often, Edelweiss in Prior Lake. Given that she had recently just planned two weddings for her daughters, I took her advice.

When we went to sample the cakes, the owner, (I can't remember his name,) was very professional and discussed everything about the cakes with us. I brought a picture of what I would like and he said he could easily do it. I also made to other stipulations, the actual cake must be chocolate and the cake must be frosted with butter cream frosting and not top with whipped topping. He took down my order and took the picture I brought. He told us to pay him about a month before the wedding.

When we came back to pay, about one month later, a very unprofessional teen girl sat us down and started sampling us cake again in a way that only someone who doesn't care about you, your wedding or your cake could... very snippy. When we tried to tell her that we were not there for another cake tasting, she told us that she was told to sample us the cake. Then she stormed off. We were horrified and asked another employee to speak to the owner. He came out reassured us and told us he didn't have our order any longer and that he had to go finish up some work. The same teen girl came out to take our order... again.

I remembered everything that I wanted, my aunt also wrote everything down from the first time we ordered and we reordered. She read the order back but I still felt slightly uneasy. Our money was taken and we left. We didn't have the time to find a new baker, so it looked like we were stuck.

One month later and our wedding had gone perfectly. When we arrived at the reception I couldn't wait to see my cake, after all, the picture I had given the baker was from the Martha Wedding mag. The cake looked amazing, perfect. I had never seen butter cream frosting look so luminous. It was pretty strange but absolutely lovely. It wasn't until the cake cutting that I found that the actual cake was vanilla, a horrible blow to a chocolate lover. Then like a cruel trick, I noticed that the beautiful gleam on the cake was not brought on by some kind of baking voodoo magic that I had never heard of, but by whipped topping, the awful fad that leaves a bad taste in mouth, both figuratively and literally.

I am fortunate enough to say that this was the worst thing that happened on my wedding day, but since I was little girl, I always wanted chocolate cake. My advice to anyone who is considering Edelweiss is call every week, better yet, everyday up until your wedding to make sure that you get what you really want and my advice to the owner, get better employees, this is your livelihood, my friend.

We got our 3-layer wedding cake for October 11, 2014 and we were mostly happy with it.

The cake itself was SO good, I mean, OMG WOW!! They sure know how to bake!! We froze some and defrosted it when we got back from the honeymoon to try again.

We LOVED the cake and the fillings, we had two different flavors (the best being a mango cream of some sort, I can't remember the exact name) and they did some cool work on the decorative frosting.

The price is probably the best in San Diego, and the quality of the baking is really high.

We did have a couple of issues: My now husband asked them to not have the outside frosting so thick and to make it less sweet, which they said they could do, no problem. But unfortunately they still made it extremely thick and still extremely sweet.

Secondly, they did not put the ribbon or the flowers on the cake...what the heck? They delivered it but did not tell my coordinator anything about problems with the flowers or the ribbon, so I don't know why it did not happen.

The ribbon was delivered by me to their store ahead of time, just as they requested, and they were going to put it on the bottom section of each layer. Also, they agreed to put the flowers on the cake in whichever way they felt would look nice. The flowers were on the table, and cut as they specified. But my coordinator had to rush and put them on their as the guests were arriving to the reception area.

The issues with the frosting, ribbon and flowers are why I cannot give them 5 stars.

However, the cake itself was excellent and for the price it was worth it. Always have your coordinator and delegated people be on top of things, and they will make sure your wedding is fabulous, even with incidences like this.
