My specialty is a cooked buttercream icing called Italian Meringue. It has the "mouth feel" of a sweetened whipped cream but is more stable. I will copy grandma's recipe, and cater to special diatary needs but will need to test recipes ahead of time and charge for my time.. I have two 3 ring binders full of cake flavor possibilities.
On average, how far in advance of the event do you prepare the cake?
The day before.
How many cakes do you schedule for a typical weekend?
One on Saturday and one on Sunday.
Will you work with the client's florist to garnish the cake?
Yes. Florists are afraid of placing flowers on the cake - they usually leave it up to the decorator.
What (if any) cake accessories, such as a cake stand or cake cutter, do you rent out?
Cake stands and three tier candle holders.
Do you offer delivery? If yes, how much is your average delivery fee?
Yes, locally it's free. Generally $1 per mile. both ways
