Rehearsal dinner

My fiancé and I are having to move the location of our rehearsal dinner. Our rehearsal dinner includes extended family and is about 70 people. We want it to be more of a "welcome party" and informal. Well, our new location is a country club venue where I work part time at and we are now doing a sit down dinner. While it will be a little more formal, I don't plan on it being over the time. My question is, now that we are doing sit down, how long should the rehearsal dinner be?

We had around the same amount of people (65-70 guests) at our rehearsal dinner/welcome party. Ours lasted for 3 hours, but we had a caterer do heavy app stations so it wasn't a plated meal with servers. Most rehearsal dinners I've attended, whether formal or informal, have lasted around 2 to 3 hours.

We're having a formal sit-down rehearsal dinner at a fancy restaurant and an open bar (for 50 guests). It will last approximately 3 hours, because we have several people who want to make speeches and toasts.

We had a formal sit-down rehearsal dinner in a private room at an Italian restaurant with about 30 people and it was about two hours long.

I've never seen one last longer than 2hrs but every crowd is different.
