First Married Meal to Cook

What is a good first meal to make for your spouse as a married couple? I thought it would be really fun to surprise my husband with a really romantic candlelit dinner, but can’t decide on what to make. I’d love to do something fancier/ a little bit challenging, and was hoping to get advice from all the wife’s and soon to be’s out there since my cooking is mostly just average, despite his sweet insistence that its great (he’s more of the cook haha). Please help me spice it up with a surprise please! Thanks!

    I'm not sure what you like, but I always make pasta alla vodka from scratch for my fiance when I want to have a special night! Pioneer Woman has a really good recipe for sauce. I don't make the pasta, but I do go to a deli to get nicer, refrigerated noodles usually. Then I make garlic bread and the Olive Garden salad from scratch because he loves it, haha! Then a cheesecake for dessert!

    I think the best meal would be whatever his favorite meal is! My FH was at work having a stressful day while I had the day off, so I knew he’d appreciate coming home to his favorite meal. His favorite meal is Steak, Mashed potatoes, and corn, so that’s what I made. And if you aren’t sure, just make the table look romantic lol

    I love to make risotto for fancy date night meals. You can use any protein and pair the risotto with that type of stock, even veggie stock. Risotto takes time to cook, so you have to be ready to commit to a half hour of slowly adding liquid and stirring.

    I'm not sure what your diet is but braised beef is fancy and easy and the further ahead you make it, the better it tastes. Then on the day-of you can focus on sides like really yummy mashed potatoes and grilled asparagus.

    Pasta dishes can be a really easy way to make a "fancier" meal without getting too far out of your cooking comfort zone. Pinterest has loads of recipes. H loves when I cook pasta dishes cause I always do homemade sauce. His favorites are roasted garlic alfredo, truffle pesto, shrimp scampi, creamy mushroom. Those four I'll always do with chicken (or shrimp). I'll do red meat if we do meat sauce or meatballs. Literally any pasta recipe on Pinterest can sound so fancy but they're so easy! Buy a salad (I always buy a premade one and divvy it up). I buy the really good sourdough baguettes and lather them up with lots of butter and garlic and pop it in the oven. And BOOM fancy shmancy meal.

    Steak on the grill is the first meal I ever made for FH - one New Year's Eve. It continues to be one of our favorites. Baked potatoes and asparagus or a squash medley can round it out. I marinate the steak overnight in a red wine marinade and it is so flavorful.

    Shrimp scampi is also really good and pretty easy, with some garlic bread and a salad.

    Steak, it's very easy to make. You could look up a fancy mushroom sauce or something to go on top. Sautued collard greens are good on the side.

    One of my favorite things to make for a romantic dinner is steak, grilled asparagus, and pasta carbonara. Not too tricky to make, and sooooooo delicious!

    I would make his favorite meal. That will be really special.

    The first meal I ever made for FH was chicken parm with penne, garlic bread, and a salad since it is his favorite. It is now our go-to meal when we a have guests over and want to do something to impress them. My future FIL is always asking when he is going to be invited for dinner since he loves it too.

    Other options include homemade lasagna, spaghetti alla carbonara, filet mignon and twice baked potato, etc. There are lots of easy recipes online.

    I'd definitely recommend making something for dessert too, that really amps up the romantic feeling of a fancy dinner. If you aren't a great baker a simple chocolate mousse with berries and fresh whipped cream is pretty easy but, delicious.

    I’m with everyone else that suggested steak (if your hubby is a steak lover). It’s so easy but still feels special. Filet mignon with a red wine pan sauce always comes out well. I like sautéed mushrooms and potato au gratin on the side.

    My FH’s other favorite meal of mine is chicken marsala. That’s another one that feels like a special, restaurant quality dish but isn’t too difficult or expensive! (I like Lidia Bastianich’s recipe). It’s good served with wild rice or risotto.

    I'm going to go ahead and give another vote to steak. My FH loves it when I surprise him with steak and mash potatoes, or with my cheddar ranch potatoes that I make in my crock pot. I also have done Lamb as well which he enjoyed!

    I'm Team Favorite Meal as well.. we went on a mini-moon immediately following the wedding and spent a few days at a cabin. We cooked our meals together then, my favorite of which was chicken pot pie. DH makes the best of all time and he wanted to make something together that we both love. It may not have been super fancy, but it was definitely special and memorable.

    My advice would just be that if you're eager to try something fun and challenging, look for something that's challenging technique-wise or because it's just a bit more elaborate than usual, NOT something that's challenging because it's super time-sensitive. You want to be able to take your time and put your love into this meal, and you don't want to be so stressed out about pulling out those thin fish filets (or whatever) at just the right second that you can't relax and spend time with your husband while dinner is cooking. If you want red meat, for instance, a pot roast is more forgiving time-wise than individual steaks.


    Also, in my experience, adding a little sherry, a touch of truffle oil, or a nice garnish to anything can make all the difference between a nice meal and a ~fancy~ meal. :-)
