Today has been an amazing day. My bridal shower brunch was today and my sisters, along with virtual wedding party, knocked it out of the park!! There were 35 people in attendance - with plenty of social distancing, temperature checks and Lysol wipes/spray and hand sanitizer on deck. We laughed and...

Today has been an amazing day. My bridal shower brunch was today and my sisters, along with virtual wedding party, knocked it out of the park!! There were 35 people in attendance - with plenty of social distancing, temperature checks and Lysol wipes/spray and hand sanitizer on deck. We laughed and there were plenty of happy tears too! It was a wonderful day ... it’s getting real ... a little over a month to go until the big day!!

    How Beautiful! And I love your menu. It got me excited! I never though of collard greens in eggrolls? We have always grown some lettuces and spinach to pick at will year round, but when a retired uncle moved in with us, Covid, he kept his Southern tastes. So I planted some in our greenhouse, but they produce and produce and produce leaves. Collard greens, pork or bacon with them leftovers, riccota, fried in an egg roll for the endless tv watching this year. And chicken and waffles, Yum sounds wonderful. maybe help tonight's dinner! You will be married soon, and this shower wad nice in these tough times.

    I had never heard of collard green egg rolls until my cousin served them at her birthday party a couple of years ago. They are downright yummy!! These did not have cheese in them (just the greens and pork — like the egg rolls with just pork/chicken and cabbage), but adding a little ricotta doesn’t sound bad at all!! Glad I was able to help you come up with a new menu item for your beautiful collards. Happy eating!!!
