I have to start by saying that I used Erica Bixel Cake Designs for my daughter's bridal shower. I can't say enough about the quality of the cupcakes, quick response to any of my concerns and then the delivery. She is amazing. Everyone raved about the cupcakes. My daughter loved the cupcakes so much that she used her for her wedding, which also turned out to be spectacular. I have recommended her to friends. I will definitely be using her services for future events. Erica thanks again for making both days spectacular. Great success.

After conducting an internet search, I found Erica Bixel Cake Design. I was nervous to proceed with someone without a personal recommendation, but with her excellent follow up, some great phone conversations and seeing her beautiful work, I was assured and moved forward.

From my initial cake tasting to my wedding day, Erica was a pleasure to work with. She even took a change of venue in stride, just two weeks before our ceremony! A true professional, I didn't worry once that the cake would not arrive (she handled the delivery), or be anything other than what we discussed. Our wedding cake was beautiful, elegant, and delicious and I will definitely use Erica Bixel Cake Design again for other special occasions.

Erica did our wedding cake a couple of years ago. She was so professional and yet so sweet. The cake was stunning. It was exactly what I had hoped for, sophisticated yet fun. It was a short notice cake, but Erica came through splendidly. The guests commented on how wonderful the cake had tasted and my husband and I certainly agreed. I have recommended her to many other people for any occassion.

I HIGHLY recommend Erica Bixel Cake Designs!!! I ordered a sports themed rehearsal dinner cake as a surprise for my husband. Erica, the owner, was wonderful about getting back to me regarding different preferences for the design and cake. The cake was themed from a Sports Blanket, so Erica even asked me to email her a picture to use as a reference. The cake was SO creative, fun, and very detailed. The actual cake and icing were SO delicious, fresh, and amazing! Also, Erica delivered the cake to the venue and even included instructions for cutting the cake!

I was looking for a unique cake for my sister's bridal shower and Erica really came through! She provided me with several sketches from which to choose--each reflecting exactly what I had requested. It was hard to select just one! In the end, Erica created a masterpiece. The cake was the talk of the party and really added a special touch to our gathering. We are using her again for the baby shower cake! I would highly recommend Erica.

Erica is a dream to work with. I gave her a picture to work with and she did the rest. She was very understanding when I was waffling on fondant or buttercream (went with fondant!) The cake tasted amazing!! And looked even more amazing. If I had concerns she was quick to respond and touched base with me before the wedding to confirm everything - saving me the step of having to do that myself.

Erica, did the wedding cake for my nephew and his beautiful wife, it was a 5 tier wedding cake, each tier had 4 layers of cake; 2 traditional white and 2 chocolate buttermilk. Each tier was filled with chocolate ganache and vanilla buttercream and covered in white fondant. The cake was YUM-O!!! EVERYONE ENJOYED THE CAKE SO MUCH, she was great to work with and very patient and created the cake from a photo I emailed her. Erica has an incredible talent, we will be using her for anything that requires a cake!!!! She helped to make that special day for my nephew and niece a memorable one.

I loved, loved, loved my cake. She made a four tier cake. The tiers were made of layers of Chocolate cake, Strawberry cake & White cake with a layer of chocolate pudding and strawberry preserves between the layers. The cake was covered in a chocolate fondant (yes my cake was brown not white), and she hand made pink roses (several diff. shades) and butterflies. It was delicious (what we did have from the cake feeding). I can't wait for our anniversary so that we can have more of that yummy cake. Hopefully it stood up in the freezer and will be edible. If not I may have to call her and have her make me another cake just like it. I highly recommend her. She was so sweet to work with and will do anything you want. Her creativity with the hand made flowers was just stunning.

Erica made lovely seashell cupcakes for my cousins Bridal Shower (they were amazing). Not only did the cupcakes follow the beach theme to a "T" but they tasted better than they looked - which was awesome!
Erica Bixel is such a talented and gifted pastry chief and we are so thrilled with her skills with cake and icing. We hope to be ordering a "BABIES FIRST BIRTHDAY" cake in the future!
