As we began to look for a caterer Chris was recommended to us. We wanted to have southern inspired food for her relatives who were traveling to the wedding from the northeastern United States. We also wanted much more of a small plates type meal than a heavy plated dinner (although Chris can certainly provide either one). Further complicating our search was the fact my wife was diagnosed as gluten allergic a few months after we were engaged.
We met Chris and Cindy and immediately knew we were in good hands. He met with us in his kitchen and as we talked he brainstormed ideas about dishes he could create that were gluten free and how to make dishes we wanted, but were afraid she couldn't eat, gluten free. He worked up a list of two dozen foods, we narrowed for a tasting, and then he helped us completely customize our menu around what we liked and envisioned. He was very patient when we reworked the menu a few times to get what we wanted. The food was incredible, our guests are still talking about it weeks later. Only one item, the shrimp and grits, was from his standard menu and they were truly the best either of us has ever eaten. While we don't want to list the entire menu we will strongly suggest you consider his ideas for different presentations like unique serving stations and also try the sticky Chinese pork belly. We can't thank them enough for all of the help for us, making almost the entire meal gluten free (including making special portions of the only two non gluten free items in a gluten free presentation for my wife). Amazing food and wonderful people to work with for our wedding, thank you for everything.
