We celebrate all of our family events at Disney World, and for my son’s first birthday we wanted a major cake. We were staying at the Polynesian and wanted an awesome dole whip inspired Lilo and stitch cake. Mercedes exceeded my expectations on every level. I know I am bit of a perfectionist and a real stickler for details. And I’m usually just a little disappointed with cakes that we order. When I tell you that this cake was absolutely everything that I imagined and was perfectly executed I am not overstating. We ordered a three tiered cake. Each layer was decorated in fondant. The cake was pineapple cake and pina colada cake. Made with a fresh pineapple filling. The top-tier looked like stitch’s head with beautiful big ears sticking out and a cute button nose. The middle tier was a three-dimensional pattern of Lilo‘s dress. And the bottom tier was beautiful fondant ribbons layered in a blue hombre like waves. This gorgeous cake was plated on a large circle of delicious “sand” and handmade chocolate starfish and seashells with a beautifully crafted chocolate surfboard. All of these things were perfect! they were perfectly crafted and the flavor was perfection! Not to mention the fact that Mercedes made ordering super easy. She was responsive via email and telephone. I had never done business with her but immediately her professionalism put me at ease and I knew we had hired the right person. A three-tier cake is not in an expensive endeavor but I feel that we got so much more than we paid for. I really got peace of mind. There was literally no doubt in my mind that the cake was not going to be done well, and when Mercedes arrived it was better than I could’ve imagined. You just don’t find people Who provide this level of service and professionalism and quality. If you are planning your wedding and or any important celebration and you want to have a beautiful and delicious cake without any stress you are doing yourself a huge favor to go with Mercedes. I cannot recommend her more strongly.

Our cake was for a mermaid-themed quinceañero. Amazing customer service. Mercedes really took the time to listen and make sure the cake and desserts were exactly what we were asking for. The cake was designed to our specifications. The details of everything we asked for were beyond anything we expected. The flavor of the cake was to die for. So succulent. We had the strawberry lemonade flavor, my daughter’s favorite drink. It really exceeded everything we hoped it would be. I also ordered desserts—cake pops, salted caramel chocolate cupcakes, strawberry macaroons, and chocolate covered pretzels (I don’t have the pictures). Everything was just so beautiful and so good in flavor. TCS truly, truly has it all. I will never again go to anyone else. I will be forever their customer. And Mercedes is super gracious to work with.

I live in New York so let me tell you that's it is a stressful experience trying to find the perfect Baker in Florida from New York. Mercedes made my search for a cake so easy. She was so patient and very transparent with me about all everything I asked. We even did a cake tasting which she wrapped perfectly and shipped it to me. Our meeting in person was even more professional. Towards the end, my cake turned out absolutely perfect . It was EXACTLY what I asked for. I got compliments all night. I would definitely recommend again
