Baker's Man Inc was started by pastry chef Mark Brickman. We are a gourmet bakery offering wedding cakes, specialty cakes, and pastries to the Atlanta community. Many of our products are featured in some of the best hotels and restuarants here in our city. Desserts!We are fully committed to baking only superior quality desserts as shown through our selection of ingredients. Using only the finest ingredients, including AA grade butter, heavy cream, European chocolates, and pure vanilla, this gives our cakes and pastries the added touch. We never add any preservatives or artificial flavors to our desserts.

Working in a state of the art, newly built kitchen, Mark prepares every order personally, so you can feel confident knowing that every ingredient and every nuance of every order is created just for you in the way that you have asked. No detail goes unnoticed, whether it's the consistency of piping and border or the texture of a particular design, everything that comes from Baker's Man Inc. is perfected in every way. Since Mark also oversees deliveries of your creation personally, you won't have to lose sleep wondering if you cake will lean or crumble. All deliveries are made in an air climate controlled vehicle, making even the steamiest summer wedding day in Atlanta, just like any other day for your precious confection.

Our desserts are created under the supervision of Chef Mark Brickman. Chef Brickman is a graduate of Johnson and Wales University in Providence, Rhode Island where he studied pastry arts and food service management. His work background includes an upscale retail bakery in Westchester County, New York, an upscale restaurant in Lausanne, Switzerland, The Peabody Hotel, Memphis, The Ritz-Carlton Hotels, St. Louis and Atlanta (Buckhead), as well as The Grand Hyatt Atlanta.

Do you offer private tastings or open house tastings?
We offer individual one on one complimentary tastings Tuesday through Thursday, as early as 11 AM and as late as 6:30 PM. We now offer an intown monthly tasting held the first Thursday of each month from 3-5 PM. Please contact us for more details. Our tastings are complimentary, we ask two things from you, our pricing is within your budget that you are looking to spend for your wedding cake, and that you are looking for a wedding cake with a minimum of 100 servings.
 
What are your tasting hours?
I offer my tastings as early as 11 AM and as late as 6:30 PM since my shop is located in Alpharetta.
 
Describe how you price, such as by slice or by tier, for your cakes?
Our wedding cakes are priced by the person. They start at $4.75 per serving. Our website, www.bakersmaninc.com has all the details
 
Does the price include the top tier of the cake?
Our top tier is always complimentary.
 
Do you offer custom cakes, or do you work with pre-designed styles?
All our work is custom to your wants and needs. We can reproduce almost any design from pictures that you would supply to us. Many times you may find a picture that will serve more guests than you need. We create many of our wedding cakes with decorated Styrofoam. This way you have the visual but are not having to spend a lot more for cake you do not need.
 
What (if any) special ingredients, such as fresh fruits or farm-fresh butter, do you use in your cakes?
We use only the best ingredients available. Our motto is what you put in is what you get out. Our butter cream is a meringue base made with only 100% unsalted butter and flavored with pure vanilla. Our chocolates and marmalades are all European based. We offer the option for fresh fruit in your fillings. All our cakes, icings and fillings are made from scratch.
 
On average, how far in advance of the event do you prepare the cake?
We work on our wedding cakes the week of the wedding. Our cakes never see the freezer. This is a very important touch that we offer, our cakes are all baked to order.
 
How many cakes do you schedule for a typical weekend?
It all depends on who books us first. This sets the tone for delivery as we personally deliver all our wedding cakes. On average we create one to three wedding cakes a weekend.
 
Will you work with the client's florist to garnish the cake?
We will be more than happy to work with the florist to have fresh flowers on your cake.
 
What (if any) cake accessories, such as a cake stand or cake cutter, do you rent out?
We offer several different styles of cake plateaus that we offer for rent.
 
Do you offer delivery? If yes, how much is your average delivery fee?
We offer delivery on our wedding cakes and specialty cakes if we can. Delivery and set up is based on the difficulty of the venue, the delivery window and the distance traveled from our Alpharetta shop. On average, downtown Atlanta is $65.00

Where are you located and do you work out of your home?

Baker’s Man Inc. works in a professional industrial kitchen and showroom that is located in Alpharetta, Georgia. I do all of my baking and building of my cakes out of this kitchen. The kitchen has been inspected and approved through the department of Agriculture of the State of Georgia and is regulated by the laws of the state.

How do I know how much money my cake will cost and how much should I spend on a wedding cake?

Pricing is determined by how much time and labor I spend on the cake as well as the type of cake you are looking for. I can create any of the specialties as detailed here on the website as well as many more. Pricing will depend on how many upgrades you choose, meaning, are we adding a layer of fresh fruit or Ganache, etc... You really should spend what you feel is comfortable, but remember quality can be a little more expensive than your "typical grocery store" cake. but within that, please also remember that a chef who loves what he does and is excited about working with you is paying individual attention to you and your wedding cake. It is also prudent to remember that the wedding cake can serve as a spectacular finale dessert to your perfect day and it should reflect that in taste and quality. We request a non refundable retainer of 50% down at the time of booking our services. The final payment is due two weeks prior to your wedding date. 

How do I know that your cakes will suit my taste and what I am wanting for my wedding?

When we initially meet to discuss your wedding day, you will be served a small selection of the most popular cakes that we most frequently do. I explain what each is and what it is created from and what makes that cake great and then I let you decide. I ask a lot of questions, helping to understand the ultimate statement that you are trying to make. By having this converstation, I can better help you choose the perfect cake flavor to please the most important people in your life.

Why do you offer flavored buttercream as fillings while other bakers offer mousse?

My educational background is Pastry Arts. To make a true mousse it is basically five ingredients, egg yolks, sugar, flavoring, gelatin, and heavy whipped cream.  Since your cake is going to be sitting out for at least five hours prior to cutting it, the mousse will be served warm.  Truly heavy cream needs to be kept cold in order for it to keep stiff and not risk going bad.  The best example is when you go out to eat at a restaurant and order mousse cake, ask yourself is it served straight from the refrigerator cold or is it room temperature?  Our buttercream is made with pasturized egg whites so it is room stable. It will never get soft to affect the structure of your cake or risk going bad.

How to I set up my complimentary tasting appointment?

We offer our complimentary tasting appointments  Tuesday through Thursday at our Alpharetta showroom from the hours of 11 to 6:30 PM. These are set up by appointment as we do not have a retail storefront. So I will put aside an hour to meet with you one on one to discuss my services and have samples of my work to try.  We ask two things to set up your tasting. The first is that our pricing is within the budget you have set for your wedding day cake creation. The prices can be found on our website.  The second is that you are having a minimum of 100 guests. We have added this so we did not have to go up a lot with our prices for 2009 dates.  Like your experiences at the supermarket, we feel the same pain buying our ingredients from the wholesalers. Many of our items are European based so the dollar is weak againt the Euro and that does not help with prices either.  We start booking our services 12 months prior.
