Professional catering was very responsive and professional in the months leading up to the wedding. We met several times with our event coordinator to discuss the menu and other options. Professional has the reputation as being the best caterer in the Blacksburg area, so we hoped we were getting what we paid for. They were very accommodating in personalizing our menu before the event.
Because of the time and care we put into our selection of the caterer and the menu I assumed the food would be one area where I did not need to be concerned. However, our seafood entree ended up being seafood-less (we were told the paella contained varieties of seafood, but we received saffron rice with vegetables). Our chicken entree was cold and tasteless and did not at all match the description. Professional does not do taste tests of food. It was a huge mistake to choose a caterer that does not allow taste tests, as we may have avoided this disaster from the beginning.
Another problem is that Professional's staff served up huge chunks of our wedding cake. Our cake was designed to feed 140 people, with the top part left over for my husband and I to take. We only had 125 guests, yet somehow a good number of people never received any cake. Unfortunately the cake was the best part of the meal (Professional did not make the cake).
I do believe that Professional has probably earned their reputation and I have no idea what went wrong for our event. They have been extremely unprofessional and unyielding in handling our complaints and requests for partial refund. I would urge anyone considering this caterer to obtain full descriptions of dishes, to get these descriptions in writing, and to see if you can attend a Professional catered event to taste test the food.

Professional Catering was selected 'the knot" 2010 pick for best of weddings by local brides. No professional in the industry tries harder to make every event, especially weddings, perfect.
We take any criticism very seriously. We have known since this bride's wedding in 2008 that she was unhappy with the paella. However, our menu lists "Mediterranean Vegetable Paella" as the entree, and that is what we served. A seafood paella would have been considerably more expensive. We did learn from the experience, and we try to be perfectly explicit on our contractual menus, and to define what is being served in any given item. As far as the cake goes, we are at a loss. This is the first time we heard of that issue, and we are experienced at cake service.
We are always more than happy to provide references for our services - and we still provide one of the best values in the area.
