Wedding Catering

Rudy’s Redeye Grill catered my wedding. The food, Roasted boneless chicken breast with wild rice au gratin sauce or slow roasted pork loin with mushroom red wine cream sauce was fabulous! As were the sides of House special blue bistro salad (I had guests ask me about this salad after the wedding because it was so good), Rudy’s cheesy “smashed” potatoes, Teriyaki green beans and popovers. But the best part was working with Lauren Wallan for meals of guests who have dietary restrictions! Lauren was so helpful and accommodating on the day of the wedding. We did a buffet, but for these guest with dietary restrictions, she plated these meals to ensure there was not cross contaminations. She came out to find me to make sure everything was as I had hoped. It WAS More than I had Hoped! Highly recommend

We had Rudy's Redeye cater our wedding because one of their sister restaurants is our all-time favorite place! Nicole at Rudy's did a FANTASTIC job! She worked with our preferences and ideas, was super flexible in planning everything, very organized and responsible, and the food was amazing and at a phenomenal price! Everyone loved it.

Nicole goes above and beyond in providing a great catering experience. From providing linens to working with our specific requests, she helped make our wedding reception exactly what we were hoping it would be!

I HIGHLY recommend Rudy's Redye Catering!

Sharina and the rest of the staff at Rudy's were fabulous to work with. Even when we made the decision the day of our wedding to have the ceremony inside due to rain, they were prepared and able to accommodate our requests. The food was fantastic. We received many compliments about the reception venue from our guests. It was a great decision to have our ceremony and reception at Rudy's.

Perfect wedding venue!

We originally began working with the Holiday Inn Lakeville with their venue coordinator Heidi K., but sadly, she moved onto another venue a few months before the wedding. The transition to Jamie was seamless, and they made sure all of our notes/discussions were passed along so we did not lose any groundwork laid out earlier in the planning process. They catered to our every request and even provided some great insight and recommendations regarding timing and nuances of the venue (i.e. whether to have brunch in the ballroom or conference room).
In regards to booking rooms and checking the room block, our hats go off to Mitch and Amanda. Mitch took care of everything for us from showing us what the rooms looked like in our early visits, to asking if we needed anything every time he passed us in the hallways that weekend. Amanda updated us regularly on how the room block was doing and if we needed to add any additional accommodations, which was extremely helpful in keeping us aware of who booked a room and making sure we had the right number of guests who RSVP’d.
The catering from Rudy’s truly does not need any description besides all of guests complimented their meals saying all of the food was delicious. If anyone wants to try their food before thinking of having a wedding there, make Rudy’s a date night and try some of their different food – you will not be disappointed! We opted for chicken breasts in a campaign sauce, pork with a cranberry sauce, pasta for a vegetarian option, and chicken fingers as a kids option. Our sides were mashed potatoes and Asian-style green beans.
All of the staff at the Holiday Inn Lakeville genuinely seemed excited for our special day, which made our day even more perfect knowing they were as happy for us as our friends and family.

I had such a wonderful experience with HIL. Heidi was the best and was always available to answer questions! We even had a mishap with the cake (someone forgot to pick it up) and the staff went above and beyond to make sure our guests had cake. Everyone talked about how the food was the best they've had (their green beans were my favorite - we had the Italian Buffet). I highly recommend HIL and I hope you get the chance to work with Heidi!

Heidi was amazing! She was extremely helpful and the whole process was a breeze. The food was amazing and the venue was beautiful. Would recommend this venue to anyone!

I got married this past weekend and had both my ceremony and reception at the Holiday Inn Lakeville. We seriously could not have chosen a better venue! Heidi and her awesome team were not only easy to work with, but helped make it so our day went by with ZERO stress. Whenever we had questions, Heidi emailed us back promptly and helped us work within our budget. The ceremony was set up in 2/3 of the ballroom and a social hour was set up in the other 1/3. After the ceremony, guests were able to go straight to the social hour and the ceremony room was turned into the reception within the hour! The food (catered onsite through Rudy's Red Eye Grill) was AMAZING and all of the staff we worked with from our initial booking through the actual wedding day were just awesome! There are also two beautiful parks within 2 miles of the hotel that worked great for photos and the hotel even let us use their shuttle to taxi our wedding party to and from photos. My wedding day could not have been more perfect and that is in large part due to all of the work Heidi and the team at the Holiday Inn and Suites in Lakeville put in to our special day! We even came back to chocolate covered strawberries in our room! On top of all that, this venue didn't break the bank either! Thanks again Heidi and the rest of the HI Lakeville team!

The Holiday Inn Lakeville was an amazing place to have our wedding ceremony and reception. The staff was amazing from begining to end. Jessica, Kara, and Brooke helped so much with the planning. They were always quick to answer any questions. They had great suggestions with no pressure. I had a great time working with them. The day of the wedding was awesome. We used just about every space in the hotel, an extended stay room, a conference room, the ballroom, the lobby, and even an empty hotel room they allowed us to go into to take a picture from the balcony. All of the hotel staff were very friendly and did everything they could to help us. The ceremony was set up beautifully and things were changed over very quickly for the reception. The food was amazing! Kerry was wonderful. His dinner service was so great. He made sure everyone had everything they needed and more! The bartenders were friendly and fun. I can't say enough about the wonderful people and how amazing they made our wedding day. I will suggest the Holiday Inn Lakeville to anyone for any event.

I have never felt so comfortable and welcome as I did at the Holiday Inn in Lakeville. Jessica and the staff were all willing to help me with all of the details I needed in planning my wedding. The venue is perfect for accomodating out-of-towners and made it easy to book and reserve rooms for all of our guests. My reception for the wedding was absolutely beautiful, Jessica and her staff put up my center pieces and arranged all of our details perfectly. It was nice to be so confident in the H.I. staff to do such a beautiful job. I have recieved so many compliments on the staff, venue, decor, and entertainment we had at Holiday Inn in Lakeville. I have nothing but good things to say about my experience with the Holiday Inn in Lakeville, and Jessica. I'm only getting married once and it was more beautiful than I ever thought I would have for a wedding, and I truly have the staff to thank for that. I really can't say enough to tell how wonderful you made my wedding experience.

Everything at the Lakeville holiday inn was great. Everyone that attended or reception raved about how great the food was. We had a number of guest tell us that this was the first time at a wedding reception that they were able to eat and enjoy everything on the buffet

Having Jessica and the rest of the staff at the Holiday Inn, Lakeville help us from the very beginning really made our choice to have our reception here one of the best decisions we made. The whole planning process was organized so nicely. They made sure we had everything covered, which helped us to catch things we hadn't yet planned out. Communication was great and they always got back to our questions in a timely manner. All of the pricing was given to us upfront, and nothing was ever a surprise. They were able to help us estimate our costs and stay within our budget. Very honest and accommodating, which lowered our stress level. We highly recommend this venue to anyone.

The Lakeville Holiday Inn was AMAZING! We had a great wedding and they helped everything go very smoothly. The catering/event staff were very respectful and made the bride and groom their top priority. The head event manager was a major help and knew what she was doing. The planning was SO easy! I would absolutely recommend having your wedding with them!

The ballroom was beautiful. We got a great deal because it was a Sunday. Only 500 dollars to rent a 4200 sq ft ballroom ALL DAY... there was a 1500 food minimum... and they served food and drinks all night long. Everything was very nice and it was a great location.

It was an amazing venue with wonderful food. Everything from planning to date was perfect. The staff is wonderful, Jessica and Kara are amazing! Plus we got a breath taking suite for our night stay, amazing!

We used Rudy's Red Eye for our food out of Rosemount. Nicole was great and was flexible when our wedding start was delayed due to a late shuttle bus. She was there and always checked with us to make sure everything was good and if we needed anything.

The food was AWESOME - people were talking about for days afterwards telling us how GOOD it was! We will definitely be making a drive every so often to Rosemount for date nights!

We had a great experience with Danielle and the Holiday Inn staff for our wedding hotel block of rooms! The staff handed out welcome bags to our guests and there was a very nice shuttle to move people back and forth from the reception! Everyone was very kind and I truly enjoyed our experience with this hotel! I would HIGHLY recommend it!!!

Our wedding was flawless! Everything we needed or wanted was taken care of. It was so beautiful and fun. The food was delicious! Best wedding food ever, was what we heard from many people.

The only area I mark a little down was responsiveness. This was because there were a few times when Jessica was one leave that my emails weren't answered or it took a long time to hear back.

The Holiday Inn, Lakeville was an awesome place to have our reception. Rudy's Redeye catered and my guests were blown away by the food. I heard from soooo many people that it was the best food they'd ever had at a wedding, hands down. The help was great, we just dropped off all our centerpieces, candles, and placecards, etc., and showed them how we wanted them set up, and they had everything perfect for us when our guests arrived. The only thing that was stressful was some extra charges but they were refunded, and it was a little hard to get ahold them at times. Other than that, things went perfectly, we got a great room for after the reception, and everyone had an amazing time.

The accommodations were excellent. I asked a person standing at the door to the reception room the afternoon of the reception if my niece could have a vegetarian meal. She immediately went to the chef and came back and said no issue. The food was wonderful and served on HOT plates. All guests were served within a short period of time. The bar tenders were absolutely great! The hotel rooms were clean and very nice. We heard comments from many guests as to how impressed they were with everything provided by the hotel.

Jessica was very helpful whenever I needed her. The ballroom is so pretty already that it didn't need a lot of help. I appreciated their flexibility to my needs.

The Holiday Inn in Lakeville was a great place to have our reception! The food is delicious and the hall itself is quite pretty. Prices ran a bit high, but I suppose that's par for the course. Jessica {catering director} was great about answering questions and trying to work with the ideas we had.

Nice hall for the price. We did have a problem with them screwing up our instructions regarding an open bar. Food was very good though.

We had great comments on the food that was provided (guests had their choice of 3 meal options). With 250 guests, everyone was served in a timely manner with hot food. Cake service went just as smooth (they do not have an additional cake cutting fee). This is a very new building...I booked it the day they were laying carpet.
The only downside was they said we would be able to be in the room to decorate at noon on Saturday afternoon, we the crew arrived, they said Friday nights wedding had not yet been cleared, dishes still on tables. So we left our centerpieces with one employee and showed them how the 3 different styles were to be put onto the table, they took care of it for when we arrived....no other guests would have known how it looked a few hours before.

Our wedding reception area was set up beautifully! We were very pleased with those that we worked with and would definitely recomment Holiday Inn to others! The night went very smoothly and the staff were outstanding!

Up until the day the staff was very helpful and responsive but afterour wedding when I tried contacting them to tell them I was unhappy about not getting what I ordered. I ordered 4 bottles of campange-2 for head table and 2 for each of the reserved tables but only got one total!!! Extremely disappointed that I didnt hear back with an appology or anything.
