10/10 experience with Fox Den!
Melissa made the most DELICIOUS cake and mini cupcakes for our wedding this past May! Not only were they amazing, but they all had to be gluten free and no one could even tell the difference! Our guests raved about them and we even had leftovers for our family to enjoy the rest of our wedding weekend. Melissa is so sweet and even made a to-go tasting box for us since we’re from out of town and didn’t have time for a full tasting meeting. Fox Den was AMAZING. I’ve been raving about our cake decorator since our wedding. We had a gluten free vanilla cake and it wasn’t dry at all, it was perfect and tasty! The buttercream wasn’t too sweet, either, which I love. I’ve never had better vanilla buttercream (and I’m a cake decorator myself). We also got macarons. They were soft and delicious and she was able to match the colors to our theme and had the prettiest gold shimmer on them.Fox Den Baking Co.'s reply:

We hired Fox Den with a recommendation from a friend and couldn’t be happier with the results! We did a tasting beforehand and put together a game plan of many, many different flavors of cupcakes, macarons, cookies and brownies. The desserts were gorgeous and the flavors were out of this world!! There was nothing left to take home because the guests loved the desserts so much! Excellent service and amazing taste!
From the first moment we contacted Fox Den, we knew we wanted Melissa to make our cake. She is extremely nice, friendly, and helpful. You can tell through her work just how much experience and knowledge she has with baking. Our cake and cupcakes were the best cakes we have ever tasted! She also made some macaroons for our wedding favors and we got so many compliments on them! We told her our vision and sent her photos of our inspiration and she hit the nail in the head!Fox Den Baking Co.'s reply:

WOW! That is what I have to say. The wedding cake is not something that you typically hear people rave over, and we got so many compliments and requests for leftovers if we had any! First, the cake and cupcakes were all gorgeous. Next, the flowers and decor that were placed on the day of the wedding looked amazing! We are not huge cake people, but I could not stop myself from going back to get more leftovers multiple times.Fox Den Baking Co.'s reply:

Melissa is amazing! We did a cake tasting with her first, and she provided so many options for us, and they were all delicious. We finally chose to do three tiers, each a different flavor. Everyone raved about the cake. The cake was one of my favorite things about our wedding, LOL! We also ordered personalized cookies too. Anytime we're back in TN, I am going back to Melissa because her flavors/combinations are outstanding.Fox Den Baking Co.'s reply:

On top of having such delicious cakes, Melissa was an absolute gem! She was so kind when we visited her shop for our cake tasting. My husband and I traveled throughout Italy for a summer and we expressed interest in doing a tiramisu inspired cake. She was so excited to develop a personal recipe to represent a sweet part of our relationship! The cake was delicious and the marscapone icing she made was TO DIE FOR! We left the tasting thinking about that icing for weeks!
Delivery on our wedding day went smoothly and the cake display was beautiful. We got so many compliments on both the beauty and taste of the cakes. We actually almost didn’t get to have a slice of cake, other than from our bite of cake cutting, because people kept going back for seconds and thirds!! Pricing was extremely reasonable and Melissa was super flexible in working to create our dream cake display. If you need a baker in the Knoxville area, I certainly recommend Fox Den!

I contacted Melissa a few weeks before my wedding as my cake plans had fallen through. She quickly answered all of my questions and was able to bring my small cake idea to life. I was able to add on cupcakes as well which worked out perfectly because my husband wanted a chocolate cake and I wanted red velvet. We were able to both get what we wanted! After debating for a bit I reached back out to her to add on a dozen decorated cookies. I wanted something I could ship to my grandparents as they weren’t able to travel for the wedding and I wanted to share something with them. The cookies were my favorite part! I shipped 6 to my grandparents and kept the other 6 for myself. They were so cute and equally delicious!! Fox Den Baking Co was great to work with! We chose the vanilla bean cake with almond buttercream and so many guests told us it was the best wedding cake they've ever had! She went above and beyond to help us on our day, and we're so glad we picked Fox Den to provide our cake. Melissa was amazing EVERY STEP OF THE WAY. We lucked out and found her at an Open House event at our venue and I just really liked her right away. The macarons MAY have had something to do with that, but she was really easy to talk to right away and my now-husband and I just got a good feeling about her. We booked a tasting with her and not only was everything DELICIOUS, it was seriously the most fun day. We were joined by a couple friends, my MIL, & SIL and we laughed and laughed. Melissa asked many questions to make sure she understood the vision we had for our cake. She was gracious enough to meet us in Knoxville to pick up our cake topper, and she was flexible when I told her kinda last minute that we decided we wanted to use wraps on our cupcakes. Really just THE BEST and so easy to work with. Also, her vanilla cupcake w salted caramel buttercream is the best cake I've ever put in my mouth (I've eaten and baked many many cakes and usually don't have strong feelings for vanilla cake). On our wedding day, she was in and out of the venue before I even arrived and everything was beautiful. Our cake was exactly what we wanted and our guests raved about the cupcakes (choc w espresso buttercream, vanilla w salted caramel, and strawberry w cream cheese). I'm a wedding planner and have been for 6 years so I have tasted/seen a LOT of wedding cakes. Melissa's cakes definitely stand out among the sea of sweets I've had and I recommend her to every one of my couples. Her vanilla bean buttercream frosting is the best frosting I've ever had! Not only do her cakes have a punch of flavor and perfect level of moisture, but they also look incredible.
