Former chef/owner of Tage & formerly Chef de Cuisine at Paradiso, Ted has been living and cooking in St John for over ten years. Ted's reputation as the best chef in St. John is born from his training and experience as well as for the standards his skills and food set in St. John.

Ted's food philosophy follows that of the cuisine style pioneered by Alice Waters and embraced worldwide.

Simple fresh ingredients matched and prepared to enhance the dish rather than overwhelm it. Gone are the heavy sauces of classic French Cuisine, replaced by flavored oils and vinegars and recipes that bring ingredients together so that they play off each other for truly heightened interaction of flavor and taste.

Ted uses fresh herbs from his garden, organic vegetables from Josephine's Organic Farm in Coral Bay and the freshest ingredients available from local suppliers.

Best food ever

Ted was absolutely amazing. He cooked for us at our villa after my husband and I eloped on island. I gave Ted no direction on what to prepare, I left it completely up to him and he was beyond what I would have ever imagined. Best food I’ve ever had. There was so much food and we loved that everyone didn’t get the exact same thing so we could share some. I would 100% hire Ted again for any occasion. Our family won’t stop raving about him!

Ted was the chef for our wedding on St John. He makes some of the best food we have ever tasted, and our guests raved about the meal. Everything he makes is delicious. Ted is talented, polite, easy-going, flexible, and reliable. We can’t wait to have dinner with him when we return to St John for our anniversary. Strongly recommended!

His staff/crew was also top-notch. They were very attentive to guests, and even went above-and beyond to make sure we (bride and groom) were able to enjoy the appetizers during photo time by creating plates for us. Seeing as most brides and grooms totally miss out on the passed apps- this little move made a big difference to us!

Ted is a culinary god. While working with my wedding planner, she asked what we wanted for food. I replied, "I am a foodie, and we don't care about anything for the wedding but the food, we are willing to splurge on that and that alone"... and we were quickly introduced to Ted. Ted has a very holistic approach - farm to table feel for his cooking style, and was very easy to work with. He made suggestions on the menu and wine pairings, and we were drooling in anticipation of the wedding meal. It did not disappoint, and I will always fondly remember our wedding dinner (tying the memory to the food). Our guests had been raving about the Potato Wrapped Mahi and Herb Grilled Filet of Beef entrees, and were delighted by the array and quality of the passed appetizers. I want to book him for a private mean when my husband and I go back for our anniversary to St. John!!!
