Chef Kelsie and the Gingersnap Bakery team are the best! Kelsie was quick to respond to our initial inquiry and set up a virtual meeting to discuss timeline, design, and cost. We showed her some Pinterest inspo pics and she drew a sketch on the spot. Then we picked out some cake and frosting flavors to sample, and she mailed them to our house (cake tasting and a movie was so fun!). She was always easy to reach and quick to respond. On the wedding day, she personally delivered the cake to our venue, and everything went without a hitch – in fact, we completely forgot about the cake until we walked into our ballroom to preview it during cocktail hour. The cake itself was absolutely beautiful and hit the brief perfectly; it was exactly what we wanted. It was an 8-inch single-tier token cake for the photo op, and the photos turned out great. Moreover, it was DELICIOUS! Perfect texture, just the right amount of sweet. We got their mocha flavor with chocolate ganache as our filling/frosting but asked for vanilla buttercream on the outside to match our white theme. We are so excited to eat the slices we are saving for our one-year anniversary!

Kelsie with Gingersnap Bakery is amazing! From start to finish, our wedding planning process with Kelsie was a breeze. My husband and I were not sure what direction we wanted to take when it came to our wedding cake. Kelsie provided us with a sample box of cake and frosting flavors to mix and match. Every option was more yummy than the last. After this, we knew that no matter what we decided, it would be delicious! We decided to order a small personal wedding cake and a few of the "bite-size" desserts (half-moons, brownies, cannolis, etc.) Everything was fresh and so, so incredible. Our dessert table was fun and filled with all of our favorites. We got to choose the details which made everything feel more personal. The team had worked at our venue before, so they were able to provide additional details to help elevate our ideas with decor. Kelsie delivered everything to the venue and arranged them beautifully on the stands that we provided. We hardly had any leftovers because our guests loved everything so much. I highly recommend working with Kelsie and her team!

We loved our cake!
Gingersnap Bakery provided the cake for our wedding at Hotel Syracuse. We didn’t have a clear idea of what we wanted, but by the time we tasted all the cakes, fillings, and frostings – we knew that no matter what we chose, it would be delicious! I was having a hard time articulating what I wanted the cake to look like….so I drew a picture of it. Gingersnap Bakery worked magic and turned my chicken scratch of a drawing into our dream wedding cake! (Our photographer captured some great photos of us seeing the cake for the first time!)

We used Gingersnap Bakery for our wedding at Hotel Syracuse. Kelsie was great to work with and helped us to customize our wedding day desserts and make them exactly what we wanted them to be. We also sent her a picture of a cake that was everything that we wanted, and she replicated it beautifully, even better than the original! I feel that often with bakeries, either it looks really good OR it tastes really good. Gingersnap has the winning combo and we couldn’t be happier with our choice to book them for our wedding. We choose to do a cake as well as a large assortment of minis. Kelcie was easy to work with and very communicative, especially as I was one of those very hands on brides. The type that needs double confirmation lol. The entire team delivered exactly what was ordered, and decorated so beautifully. The guests raved about the selection- barely left any for the bride & groom!

Gingersnap was recommended to my mother when she asked about places to get a wedding cake from on a Facegroup group. Kelsie called us back right away and prepare a personalized tasting box for us with several different cake flavors and frostings we were interested in, including dairy free options for my husband. When we tasted her cake and frosting, we knew immediately we had to have them for our wedding. My husband said he has never had dairy free frosting that good. We did a pumpkin sheet cake with cream cheese frosting, a lemon raspberry sheet cake with raspberry filling, and a dairy free cake as the cake we cut. Each cake was big with multiple layers inside and my family was talking about it for days after! Highly recommend!

My husband and I got married on 8/7/2020 and gingersnap not only made me my dream wedding cake, but also made the groom a grooms cake. With all the complication of COVID-19 and wedding planning gingersnap worked with us and did anything we needed them to do. Our cakes were all delicious and couldn’t ask for better service! Perfect wedding cake + desserts!
My Cake and desserts were so amazing! They turned out exactly how I dreamed they would be! My Cake(s) [we had 3 different cakes🤭] were perfectly decorated and tasted delicious! we had the most delicious chocolate buttermilk cake with chocolate fudge, and pumpkin spice cake with vanilla Pastry Cream filling! Iced with Italian Buttercream frosting how could you go wrong. At our tasting we were able to mix and match a bunch of different cake, filling, and frosting combinations to find the perfect one.
We also had a mini dessert display! OH MY GOSH, our guests were raving (for weeks after!) We ordered s'mores brownies, cream puffs, and French macarons! We were able to rent the most gorgeous ivory and gold stands too.
The staff were all so kind and set everything up so beautifully at our venue Wolf Oak Acres. Thank you Kelsie, Ally, Leah, and Bailey for helping me have the most lovely wedding day!

Superb Bakery and Better Experience
Kelsie and her team at Gingersnap are the best in Central New York and it’s not even remotely close. The cake we had at our wedding was to die for and, while seemingly simple, left your palate feeling like you just experienced a complex fresh craft beer. The flavoring is so distinct and unlike your standard cake, filling, and frosting that you wake up then next day and want more of the thing you just had the night before. The cupcakes were better. The strawberry cupcake with champagne frosting is the best food item we had at our wedding with no exaggeration in the least bit at all - and the cake and everything else was also perfect, too. The whole process from the tasting to nailing down details and then delivery and setup was just awesome. Thank you all for making our day so special and sweet! You have found customers for life.

A Great Decision!
My husband and I worked with Gingersnap Bakery for our wedding. Of all the vendors we contracted with for our wedding, Gingersnap was by far the easiest to work with.
We ended up contacting Chef Kelsie Mack less than 2 months before our wedding, which was fairly short notice given our schedule. From the very beginning, Kelsie’s responses were timely and thorough. With just a few email exchanges and a single phone call, we had our wedding order completely sorted. This was really helpful for us as we were planning the wedding remotely and weren’t able to meet with Kelsie in person.
When it came to the day of the wedding, Kelsie had set up all of our desserts in our reception venue perfectly. No one from the wedding party was on site to help direct set up, but everything looked exactly as we had hoped. Kelsie worked with display stands as well as a few small decor items we provided. It was such a lovely surprise to enter the reception venue for the first time and see such a beautiful dessert display!
Finally, and perhaps most importantly, everything was delicious! My husband and I are both lactose intolerant so Kelsie made an almond cake with raspberry jam and vanilla buttercream frosting completely dairy free. We also had non-dairy free cupcakes in vanilla, chocolate peanut butter, and pumpkin spice. All of our guests loved them!
Looking back on our wedding and the whole wedding planning process, working with Gingersnap Bakery was one of the best decisions we made.

Gingersnap Bakery was very responsive to our needs, highly confident that they could make our very unique birch tree slab cake with sunflowers, and they were half the price of the competition. Our guests were shocked that our cake was actually cake until we cut the first piece! Highly recommended and I will be going back again for any future cakes. Perfect wedding cake
The wedding cake for our daughter was delicious and very beautiful! Gingersnap Bakery did a fantastic job. They were so helpful as I ordered it from Texas. Kelsie, the owner was very professional, helpful, and returned all of my calls and emails, with patience and flexibility. She wanted us to be happy, and we were delighted seeing it in person. She made it very easy for us to order the wedding cake and gourmet cookies all from emails and phone calls. The cookie platter was a nice addition. We had little treat bags so people could take some cookies home with them. The guests were so excited for that . Btw, the cookies were so yummy. ( II enjoyed eating them on the plane ride home.... )Thank you for a perfect wedding cake!

Holy cow!! You and your team killed it!! My wedding cake was the talk of the night and the custom cake topper, to die for!!!! Flavors we're incredible and the design was exactly what we dreamed up!! The only down side was the 3 tier cake never got touched, My husband and I cut out piece and that was it. We came home with the whole 3 tier cake and 1/2 a sheet of chocolate and 1/2 sheet of champagne cake. So in high sight we definitely didn't need as much cake as we were quoted for. Other than that everything was great!!! Thank you for everything!!

Working with Kelsie and staff was so easy from day one. I did tastings all over Syracuse, and was drawn to trying the Gingersnap as well. All the fancy spots I tried we're a disappointment. The Gingersnap gave a tasting with a handful of flavored cakes as well as fillings and frostings. Also, the price was incredibly low, but I would have gone with them anyway, customer service means a lot with me.
Kelsie was super flexible, which was great, since my ceremony was moved from evening to day to evening again. She insisted on setting the cake up, and putting the flowers I ordered on it for me. And the cake was delicious!!!!

And the detailing on the outside was everything we hoped it would be. our guests also raved about the look and taste. Kelsie was amazing! We lost our cake topper two weeks before the wedding, my mom had it, and Kelsie told us that we could take our time and find another one, no problem. She was super accommodating and kind the whole way. We changed our order maybe a month before and it was okay, everything was done above and beyond our expectations. Our wedding was at the end on July and it was hot, the frosting stayed fine and everything was delicious. We had a three tier cake and 187 cupcakes, all different flavors and they were AMAZING! We were very happy with GingerSnap and everyone still talks about our cake and cupcakes to this day!

Absolutely amazing! We did a small cake for our wedding and served 8 different flavors of cupcakes. During our tasting, we were guided through selecting the flavors and shown various cake designs which made the selection process easy! Gingersnap followed up with me two weeks before the wedding to finalize the details and we were able to reduce our order as we had a better guest count by then. When I dropped off the cake topper, I sat down with the baker and we reviewed every detail- I did make some small last minute changes based on her feedback. I was a bit nervous regarding the display as I wanted all 8 flavors separated and labeled and I couldn't believe my eyes when I entered the reception room! The display was absolutely stunning! When my husband and I cut the cake our eyes literally lit up as we had our bites! Unfortunately the day flew by and we were unable to get back to the cake table but we did dig into the top layer the next day before freezing the rest!! That's how good it was! Now two weeks later, guests are still raving about the cupcakes and asking where the baker is located! I would highly recommend the Ginersnap to all couples!

SO far my experience has been great. She spent a lot of time with us on the consultation and the cakes during the tasting were delicious! Also, they sent a nice postcard after our first visit which was nice!! The dessert table came out beautiful and all the desserts tasted so good. We received many compliments. Anne did an amazing job on our wedding cake!! It came out exactly as we pictured it to be! She also worked with our budget so we could get what we wanted. We ordered a 3 tier cake and a full sheet cake. My only disappointment was our kitchen for the banquet room must have cut extremely small pieces for our guests because they used the sheet cake but we had the entire 3 tier cake left over. I'm not sure if the kitchen thought not to cut through the actual tiered cake, but it felt like a waste of money. It was nothing gingersnap did. My advice to future brides is to make sure the kitchen cuts ALL of the cakes. I will always go back to gingersnap and recommend to all! Thank you!!!

The Gingersnap was easy to work with. They fit us in for a tasting appointment just a couple days after I called, and they gave us a tasting tray of lots of delicious cakes. We knew from the start we were only ordering cupcakes but they still treated us well. Our friends picked up the order the day of the wedding and the bakery called to make sure they were coming so they didn't accidentally close before they arrived. The day that we met with Anne was awesome- we told her exactly what we wanted and she sketched it up in a matter of minutes! The prices are definitely reasonable- you get what you pay for. They also delivered the cake right to our reception site (Borio's Restaurant in Cicero, NY). Where Ann really shined was when she created the groom's cake. I surprised my husband with a groom's cake shaped like a replica of his college. When I first had the idea I thought it would be an impossible dream. I contacted Gingersnap and Ann assured me she could do it. It was AWESOME!! I absolutely loved my wedding cake! It was unique and it tasted amazing! There are many designs and colors and flavors to choose from! The ladies there are so nice and professional and listened to everything I had to say! They created the cake of my dreams! I would recommend them to anyone! Prices are reasonable! Thanks!!!!!!!!!!

My cake was so amazing and have gotten so many complements on not only how beautiful it was, but how great it tasted. It was so moist and delicious! Definetly a great price for such a great product!

When my wife and I booked our wedding reception for Greystone Castle, Annette, the hostess, gave us a list of recommended vendors. I didn't give it much thought as I cynically assumed it was just a good way for them to partner up and make more money together – we ended up using three of her recommendations because of how much we liked them. The Gingersnap bakery was one of those fine vendors.
Anne, the woman running the Gingersnap, was one of the most delightful people I've ever had the fortune to work with. We wanted a very special cake made for us that combined a Medieval/Renaissance style with Batman. A far out idea for sure but she made it work amazingly. I was blown away when I saw the cake she'd made for us. Every step of the way she was enthusiastic, creative, and so friendly – you can really feel the love she has for her work.
I would fully heartedly recommend Gingersnap to anyone looking for the perfect wedding cake. Not only do the cakes look amazing, but the amount of different flavours and combinations they offer and how drool-inducingly tasty they are make it a phenomenal value. They could probably blaze through one of those cake-competition reality shows on TLC or Bravo and win with flying colors. They cakes and the service are just that good. Professional, creative, and delicious!
Further details: we got a 3 tiered Apple Spice Cake w/ raspberry filling and buttercream frosting styled to look like castle bricks. Custom painted fondant "coat of arms" were decorated along the side to look like a huge castle, with each decoration symbolizing a part of our relationship. We also got a full sheet cake of the same flavour. A great deal for how much quality you get with the cake.

Yummy cakes great to work with!
Kelsie and the rest of the staff were great to work with. We made a last minute change of one of our cake flavors it was no big deal. Their cakes and desserts are DELICIOUS!!!

Although they seem a little unorganized, the team at the Gingersnap made us a wonderful wedding cake! They listened to everything that we wanted in a cake and gave us what we wanted. My mother did my flowers and they were willing to work with her so that my mom could put the flowers on the cake after the cake arrived. I cannot wait for our 1 year anniversary to enjoy the piece that we saved!

Even eating our cake a year later, it was delicious! They created a gorgeous cake exactly how I described that tasted delicious. Very affordable.

Looked and tasted great but
The cake, cupcakes and cookies looked amazing and tasted great, however the decorations on the bottom tier of the cake was not correct. They were also supposed to supply a cake holder as well as trays for the cupcakes and cookies but they did not. I emailed to confirm the time they were coming and what they were bringing with them and this is when they informed me that they did not have a cake or cupcake tower to bring with them as well as no trays to put the cookies on. Luckily I was able to figure something out but this was very very frustrating as it was one more thing that I needed to worry about and figure out the day before the wedding.

They have the best cake my husband and I have ever tasted. And they can make some beautiful cakes as well. Our cake tasted great; our guests even asked us where we got it because they loved it so much. We had a 5 tiered cake AND a sheet cake since we had so many guests, and 3 flavors in all.
However, they are not very professional and I was hesitant to even hire them, but my husband just loooved the taste of the cakes so much that we did. When we went there for our tasting, they forgot they even scheduled a tasting...so I was surprised that they had samples available for us. Then...6 months after I sent in our deposit...they called us to see if we had decided to hire them or not because the wedding date was coming up and they never got the deposit. We were forced to look back into all of our records in order to give them a copy of the check we wrote to prove to them that we had already written them a check (a check that they had already cashed 6 months ago!). I was worried they would forget about our wedding after they cashed our second check as well!

Be specific with design direction
We used Gingersnap for our Wedding cake (tasting cake and cupcake tower). Their tasting process was interesting. At first I thought a take home tasting box with individual cake, filling and frosting elements was a great idea, but it made it difficult know how different combinations would work together (would they be too rich, etc.). Flavor wise, the cupcakes were delicious and primarily worked out OK, just know there is LOTS of frosting which does mask the cake flavors. The tasting cake wasn't nearly as good (even though it was the same flavor as one of the cupcakes), it was dry and didn't taste as fresh.
We were disappointed with the look/design, especially of the tasting cake, as it was quite simple and came off as an afterthought. We had multiple conversations with the bakery and shared some ideas/photos/examples for what we thought would look nice, but on the whole deferred to their experience (as I did with most of my vendors). This was the only case where it didn't really work out in our favor. Our tasting cake was very plain, flat white icing with just a ribbon in our color around the base, and none of the other design elements we discussed.
Overall, I wouldn't not recommend them, but I would tell couples to be very specific on what they want their cake to look like, as leaving it up to the bakery just didn't work for us. We were very underwhelmed and disappointed by our wedding cake.

I was truly embarrased by this cake. I wanted to hide it. It was absolutely hideous and unprofessional. A 10 year old could have done a better job. It looked NOTHING like the picture we picked out. It was NOTHING like our tasting sample. WORST CAKE EVER and I am insisting on a refund!
