Fantastic wedding cake and cupcakes!

She did such an amazing job! The decorations and colors were perfection! The quality and taste of the cakes were beyond mouth watering. We couldn’t have been more pleased! We highly recommend Emerald Coast Custom Cakes. We will definitely be using them again for any other special occasions coming up!

Stunning Beach Wedding Cake

Heather was absolutely amazing to work with! I showed her an idea of the cake I wanted on Pinterest and she made it come to life and it looked even better. Her attention to detail is immeasurable! And OMG the flavors she offers are insane! Our wedding cake was the pink champagne flavor and it was to die for. I cannot wait to eat the top tier on our anniversary! She also did an Alabama grooms cake for my husband which was double chocolate and he absolutely loved it as he is a die hard bama football fan. She is such a kind and wonderful person to work with and her cakes are one of a kind! 10 out of 10!

Yummy sweet treats!

Due to COVID, we had to downsize our wedding at the last minute. Since we already paid for our large cake in full, we decide to get a smaller cake and cookies (to make up the difference in cost) for guests to take home with them. Everything was delicious and beautiful!

We got a vanilla bean cake with fresh strawberry buttercream and it was absolutely delicious! She also painted a custom made cake topper to go with our cake. The colors were exactly what we asked for and the cake was absolutely beautiful! It was also very delicious. We had a few extra slices that we froze and have been continuing to enjoy. We tasted cakes at 3 other locations and this cake was the only cake we actually enjoyed. We are so happy we got our cake from Emerald Coast Custom Cakes!

The naked cake was gorgeous and delicious! And very fairly priced. We met for a tasting and everything was so good that it was hard to decide on flavors. It was light and not too sweet, made with delicious fresh fruit in the buttercream. It was simply amazing and everyone said how beautiful it was! Heres a link to a picture...

I LOVE Emerald Coast Custom Cakes. Heather worked very hard and made the cake of my dreams. She is a true artist and was there for me all the way. My cake had layers of white chocolate/blackberry and lemon/blueberry. The flavors were amazing and my cake turned out to be the statement piece at the wedding. I highly recommend Emerald Coast Custom Cakes for any event!

Heather was super nice and helpful.
We did all of our business over phone and text since I don't live in Florida, and she still did exactly what I wanted for my wedding cake.

I wanted the cake and dessert area to be the centerpiece of my wedding and Heather did not disappoint. The cake was amazing along with all of the assorted desserts. The dessert bar was better than I could have imagined. Heather was fantastic to work with and was able to take several cakes that I liked and combine them into the perfect wedding cake. Her brownies are the best I've ever had :) So many guests commented on how great the desserts were and how pretty the dessert bar looked. I would highly recommend working with Heather!

Heather is AMAZING! She definitely made my dream wedding cake. I always wanted a suspended cake and she made it happen. ALL of my guests were so amazed by how delicious and beautiful the cake was. Heather did my daughter's wedding and groom's cakes. She recently did my grandson's first birthday party. The cake was more than I would have ever expected. Heather is very creative, therefore, the cake was perfect. It was a 3 tier Mickey Mouse cake and the smash cake was the same theme. She decorated and set up the party area which was fabulous. She also made party treats for the guests which were Mickey Mouse ears made of rice crispy treats with chocolate ears tied with a red bow. They were a big hit with everybody. The cake was not only beautiful, but delicious. Heather is a very talented artist and customizing each cake is her strong point.

Heather was awesome! She was easy to communicate with, very responsive, and jumped right on board to my texting ways! She made sure she knew all my required specs, and I felt like I knew her immediately. Her work was flawless, and exactly what I asked for; it also tasted great, which seems hard to find. I was a little concerned, being 9 hours away, but she did phenomenal.

It was a joy working with Heather! Not only did my wedding cake look better than I imagined, but all of my guests were gushing about how delicious it was. I love how she communicated with me before, during and even after the event. She was more than my cake vendor-- she was there for me when one of my vendors let me down. My husband and I actually had only one tasting, but it was all we needed. It was absolutely delicious! We used several different flavors for our three-tiered cake, and another for the grooms cake. Not one of the sections tasted anything but great, and we received many compliments from our guests as well.

We spent a couple hours with her telling her our styles, even thought we had decided on one. After searching several other cake designs, we found our perfect cake, so she changed it for us, no questions asked. And on the day of, it was exactly what we had imagined!

Our wedding was outdoors so she even made sure to bring the cake as late as possible as our resort did not provide anywhere to keep it chilled. She was super pleasant to work with.

My husband is military so we took the top tier home and enjoyed it with friends the next day (not easy moving around and trying to take a cake with you!) We were all drooling and talking about how wonderful it was!

Heather makes the most delicious and moist cake I have ever tasted! Her presentation was beautiful and the design was exactly what we wanted. We were married May 2, 2015. We couldn't have asked for a better cake. I'm looking forward to my first anniversary so that she can bake us a small duplicate since the remainder of our cake had to be thrown out due to ants at the hotel :-( I was very upset about that because I was looking forward to returning later and having a big piece of that delicious cake. Our guests rave about it!

Emerald Coast Custom Cakes is by far the best I have ever encountered. I was planning a destination wedding and could not come in to do a taste test but Heather made it so easy and flawless for me. She was amazing in every aspect and I told her my ideas and she did exactly what I envisioned and dreamed of! She is the absolute best ever!! People were asking me all about our cakes and who did them because they were the best we had ever tasted. My husband LOVES Captain Morgan and she was able to make a rum cake for the groom cake that was the best thing any of us have ever eaten. People were talking all night about how much they loved the cakes and cupcakes. And everything was so beautifully done. Thank you Heather for making my cake dreams and our dream wedding come true!!

Working with Chef Heather was a joy. My daughter was living in Florida and I in Michigan. Chef heather worked with both of us, long distance, through email and telephone conversations we were both extremely satisfied. She delivered the cake and then returned later to ensure it was set up correctly. The flavor was awesome and the cake moist and fresh. I would recommend Chef Heather for any event, she was courteous, professional, and helpful in helping to achieve the cake we desired for the wedding. The craftsman ship and care she took made it an event to remember.

Emerald Coast Custom Cakes made a naked chocolate cake with butter cream, blackberry pie pops, and mini pecan pies for us!
All three yummy deserts were not only delicious but beautiful! Everyone was raving about them!

Let me start by saying that as a wedding professional myself, I have tasted over a hundred wedding cakes in my career. Mine was the best. Objectively speaking, my wedding had the best wedding cake I have ever tasted.

It was very important to my wife that she have a wedding cake like the one she dreamt up on Pinterest, though neither of us expected Heather to realize the design so beautifully. Needless to say, my wife was in tears at how gorgeous and how perfectly her Heather's cake was. And I was totally blown away by how cool my groom's cake was. She made it look just like a DJ's mixing board even with my company logo on it and a pair of fondant headphones! I've got to say, Heather can make a cake look like just about anything.

Forget about how pretty the cakes were, as their looks were nothing compared to the taste. Heather has a wide variety of flavors to work with and is always happy to help you imagine new ones. We had white chocolate raspberry, champagne strawberry, and red velvet (my favorite). My favorite thing about Heather's cakes is tat she uses real butter instead of shortening for her icing and that is a big deal for me as I do not typically enjoy icing.

Heather, thank you so much for making our wedding all the more special. We are truly blessed to know you.

Ms. Heather and her cakes are spectacular! I received several price quotes from other vendors in the area and I kept coming back to Ms. Heather. Her pricing was by far the best but her cakes... Wow! Both our wedding and groom's cake were made by Heather. The wedding cake was a strawberry champagne with swiss buttercream icing, and the groom's cake was a dark chocolate with caramel. My husband is a die-hard Saints fan so of course his cake was Saints. Ms. Heather went above and beyond with his cake! It was exactly as described and even had a Saints helmet on top! Everyone raved about both cakes, and no one could decide a favorite! (Personally I chose mine.. I mean strawberries and champagne.. Come on!)

Ms. Heather was extremely accessible. We usually texted back and forth to decide on cake stands and finalizing details. She even met me at 9:00 at night at the Pensacola airport because I had decided I wanted ribbon around my cake. 2 days before the wedding... And she was so incredibly sweet throughout the entire process. She even stayed to greet us after the ceremony to make sure we were happy with the cakes. We absolutely love her and her work, and we would recommend her to anyone!

I do not believe I could write enough great things about Heather to sum up her business! She is a wonderful, creative, and talented pastry chef and we here in the area are very lucky to have her here. She worked with my budget without pushing me to spend more unlike other bakeries in the area. She was very professional and took time to talk with me about making my dream cake. I am very visual so it was nice that she took time to sit with me while I explained and showed her what aspects of other cakes I wanted to incorporate into my wedding cake. She created a beautiful, art deco piece that truly embraced my look. You will not go wrong by hiring her! We loved her so much we have hired her for other events after our wedding! Heather was amazing to work with. I contacted her and she called me back the same day and we talked for a good 45 minutes about what I was wanting (because I was planning a long distance wedding). She completely understood what I was wanting and kept throwing in new ideas and I loved every bit of them. She was very flexible with throwing in things I wanted last minute too. Her cake was UN-REAL. I got sooooo many compliments on it-saying how amazing it looked and how delicious it was. Sadly- I didn't get to try all the flavors, haha- but what I did try was yummy! And no joke- cake is my favorite food... :)
Her prices were a little high for my budget, but I talked to her about my concerns, and she did what to could to get me what I wanted, for the price I could afford. My mom met with another wedding cake vendor right after meeting with Heather (since I couldn't be there) and my mom said HANDS DOWN, she would rather work with Heather because of her attitude and warmth. The other person was about $200 cheaper for the cake, but my mother said she liked Heather so much, that she would rather pay the extra money just to work with her--so that's saying something!!!! :)

Heather created my daughter's wedding cake which was absolutely breathtaking. The wedding cake was a focal point of the reception. It was not only beautiful but delicious. Each layer was a different flavor and each layer decorated differently. Heather listened to my daughter's requests, designed, made changes and delivered my daughter's vision. The cake had very intricate designs from the pearls to the butterflies and the other designs Heather added. Our guests were captured by the beauty of the wedding cake and more importantly to the guests, the taste. Heather is very meticulous and takes every effort to please the bride. She will spend the extra time to make sure the cake is perfect from the first meeting to the delivery of the cake and the turnover to the bride. There is no one better in pleasing a bride, regardless of the demand.

Heather did something so special for my husband and I. She made a special cake I entitled the "Bride's Cake" that sat on our table that was just for us. It was an amazing, homemade coconut cake (our favorite) that not only tasted great, but was made exactly how I asked her based on pictures I sent. She took my vision and made it special!

From the initial consultation and cake tasting to the set-up and delivery on my daughter's wedding day, Heather did not disappoint. In fact, she doesn't just make cakes, she creates them! Heather does an amazing job at creating cakes! She created a beautiful cupcake tower in multiple flavors as well as an amazing grooms cake for us that blew my fiance away once he had seen it! I had a very amateur idea and drawing about what I wanted the grooms cake to look like and she came back with an outline of what the cake would look like and a description of all the pieces, she even consulted with me to get the right variations of sports logos for the cake! Very thorough, highly recommended!!!

I was SO PLEASED with my beautiful wedding cake! Because I lived 2,000 miles away, I wasn't able to taste my cake or sit down with the owner. But she made wonderful suggestions and helped us pick out the perfect cake for our special day! I would highly recommend her to anyone in the norh Florida area looking for that perfect cake.

What a wonderful lady to work with! Being someone who knows nothing about cake, she spoke with me several times before we even got an idea. I loved her for that. She truly enjoys what she does and puts 110% into her work. Beautiful cakes!

Heather's cakes taste amazing and beautifully designed. We are so blessed to have found such a generous and professional cake designer for our Autism event. Her willingness to stay and volunteer her time to raise money for our event was over and beyond anything we could have asked for. We would highly recommend her and her services for any of your event needs.

Heather was a pleasure to work with! I was planning a destination wedding and she made the process super simple. Our cupcake tower turned out absolutely perfect and our guests are still commenting on how good they tasted! :)

Heather did an excellent job from beginning to end with our wedding and groom's cake! Her cake flavors are out of this world. The chocolate stout cake was incredible, as well as the strawberry flavoring, which included fresh strawberries. Her prices were also exceptional and she really took her time understanding what we wanted.

Thanks again Heather, you're the best! You made our wedding a very memorable experience. I still like staring at our wedding cake in the freezer! We can't wait to eat it on our 1 year anniversary!!

I could not be more pleased with how our cake and desserts turned out for our wedding. Heather was willing to work with us on a unique concept and took all of our opinions and feedback into careful consideration when completing the final product. She was also very in tune with our theme and made sure she decorated the dessert bar accordingly, with very little guidance from us. I received tons of rave reviews on the desserts and cake and I am so thankful for her services on our special day!

Emerald Coast created my wedding cake, it was not only beautiful, it was delicious. She got the colors that matched the wedding colors and decorated it with beautiful flowers. To top it off, it was my favorite cake red velvet. The only sad thing is we did not save the top for our first year anniversary, I could not wait to taste it.

Heather bakes amazing cakes. I got a three tier wedding cake that was strawberry shortcake. It was beyond delicious. She was flexible when I wanted to make some changes to make cake. I had many compliments at my wedding about how delicious the cake was. She even made a little gluten free cake for my husband's mom and his mom said it was the best gluten free cake she has ever had.

We were very pleased with our cakes! They were gorgeous and absolutely delicious! Heather let us borrow 2 cake stands for our cakes! She paid close attention to our cakes and they were to die for! The only complaint I can have was due to the weather getting bad and delaying our cake arrival and set-up. Everything ended up working out just fine! Heather was very professional and worked with me back and forth with my budget! Her cakes are wonderful and we stayed in budget! I will definitely used this company while in Florida in the future!

She is a Theif

I signed her contract paid in full for my cake. Need I mind you it's over $800.00. Then the pandemic hits. I don't get to have my wedding. I postponed a year. Then I told her due to covid and the grooms parents being in thier 70's I had to cancel for now. The contract I signed said I'm able to recoup half of this.
Honestly pissed because she never made the cake. She doesn't deserve the first 400.00.
Then she never paid my 400.00 back and I have proof she said she would honor her contract and give me half back.
Now she has blocked me from contacting her. Heather Pelham is not a good vendor and definitely not a trustworthy person.
Her contract clearly states the deposit is not refundable but the other $408.00 is.

Horrific Experience

We had to cancel our wedding due to COVID-19 and had requested that we receive the money we had overpaid with no expectation of receiving our deposit back. Ms. Pelham asked that we give her two weeks to get the money back to us and then never responded again. She has ignored phone calls, voicemails, text messages, Facebook messages, and every form of communication possible. When confronted in person, she cried that she could not afford to give us our money, money that she is not entitled to in the least, because she was struggling financially. Though we were sympathetic, no plan of returning our money was made. It was simply that she was going to keep our money. When our wedding date rolled around, thinking that she was contracted to provide us something on that day, she again ignored every communication. Heather is extremely unprofessional and does not deserve your business. She had “forgot” our very first appointment and made us come back another day. She was then hours late to the second appointment. Thinking back on it, we should have noticed these red flags and backed out immediately. However, we trusted that these were outliers and hoped it did not reflect her business model. As you can tell, this was not the case and we are out approximately a thousand dollars for a service we never received. We are also struggling due to COVID-19. We lost thousands of dollars planning and then having to cancel our wedding. We respectfully requested (and were told we would) receive the additional funds we had paid. Do not use this baker. You will be disappointed and disrespected. Our next step is legal action if this situation is not immediately remedied. Horrible business management and a thief as the owner. See you in court, Ms. Pelham.

Heather Pelham the chef of Emerald Coast Custom Cakes RUINED our wedding cake by driving fast up the drive of The Margaritaville beach resort in Pensacola Florida on June 6th, 2014. Witnesses outside the hotel saw her slam on her brakes and the cake came crashing down. She REFUSED to tell us what was going on with the cake until the last minute right before the ceremony. The chef at the Margaritaville attempted to repair what was left of the cake, but the damage was so bad that it was unrecognizable from what we purchased. Of the three layers we paid for, only two were able to be put on display. Those two layers were In such bad condition that it looked as if a toddler had made the cake. There was not even enough cake for our wedding guests (it was so bad the groom didn't even get a slice). The cake looked NOTHING like I had ordered and what our contract stated it would be. We only had two layers when we paid for three and the cake was leaning and there was cake pieces mixed in with the icing. My dream of a beautiful wedding cake was ruined and we will never get that moment back. She will NOT return any of our calls or emails and she specifically told our photographer that she was sending a check in the mail and that was two weeks ago and we have yet to receive anything. Do NOT use this cake chef as your cake baker if you have any dreams of a beautiful cake for your wedding. She has not handled the situation with any form of professionalism and will NOT TAKE RESPONSIBILITY FOR HER ACTIONS. I would absolutely NOT recommend this vendor to anyone.
