Experience
Owner and pastry chef Jessica McCelenagan founded the bakery after years of honing her talents by traveling and working in top-class restaurants. Jessica named the company after her grandmother, who inspired her to become a chef, as Merci Mamie means “thank you, granny” in French. Growing up helping her grandmother prepare desserts instilled a passion in Jessica, leading to her first steps in the culinary industry in Texas, followed by years of training in France. Jessica graduated from the renowned Institut Paul Bocuse in Lyon, working alongside such luminaries as Florent Boivin, Davy Tissot, and Cyril Bosviel. A further eight months of perfecting the art of wedding cake design followed at the 5-star Hotel Miramar Barcelona before the dessert specialist returned to the USA to work at Michelin-star restaurants. After the pandemic, Jessica founded Merci Mamie Bakery to delight the taste buds and the eyes with delicious, original creations.
