La Charlotte opened in 2004 and was the creation of Michaela Hug Nelsen. Michaela, an extraordinary pastry chef with a great vision for unique desserts brought her longtime friend and pastry chef, Jacqui Caniglia, into the bakery in 2006. Together they expanded the shop into one of Omaha’s top culinary delights. In 2009 Michaela moved from the Omaha area and turned the pastry shop over to Jacqui.

La Charlotte-Caniglia Pastries doesn't normally create wedding cakes under it's new ownership, but I was in a jam since only a few places in town bake gluten-free and dairy-free cakes. Jacqui (owner & chef) was willing to create something for me and was extremely flexible. She made a fabulous, two-tiered, strawberry wedding cake for us and two sheet cakes to serve - lemon and tres leches flavors for these. Everything tasted great and I was really happy that we were able to find someone to create a scrumptious cake that I was able to eat since I become ill eating cakes made of wheat. I would definitely work with her again. Oh, and she's giving us a free anniversary cake next year!
