When making our confections, we celebrate the traditional techniques which have been used for hundreds of years to preserve the taste of each fruit at its peak flavor. Our line of sweets include the calisson, a 500-year-old confection from Aix-en-Provence, as well as nougats, syrups, finaciers, dacquoise and pâte de fruit.
Calissons are a rare sweet originating from 16th century Aix-en-Provence and are comprised of two delightful layers: the first, a chewy and subtly sweet fruit and almond blend that brings out the best flavors of the season, and the second, a delicate layer of royal french icing for an extra bit of sweet and crunch.
