Taco Bar suggestions

We are having a taco bar for our late evening wedding - wedding starts at 7, reception at 7:45.. I have chicken, hamburger, beef, guac, sour cream, cheese, lettuce, tomato, onion, nacho cheese, chips, salsa... anything else I am missing??? I have been racking my brain for days and can't think of...

    Glad to help! I just know that when I have a taco night party at home, it can take forever to get everyone through the line (DS in particular has to arrange everything just so). It takes even longer when I use hard shell tacos, because people have to fumble and hold them up while adding the fillings, instead of just having the tortillas flat on the plate.

    Another thing you could consider instead of DIY tacos (whcih can get messy with food flying around, which can lead to cross-contamination): hire caterers/servers to build the tacos to order - like an omelet station. The staff will move more quickly, and it will be more sanitary.

    Damn, now I am hungry! I echo having more than one fixings line..and have it (them) two-sided.

    Also, definitely yes on the olives. I love olives. LOL!

    Dude they have those hard taco shells you can buy that stand up on their own. Just saying. I love those things -- not only do they stand up, are bigger so they hold little bit more, but they are easier to fill.

    You are so lucky that your fiance is on board with this... mine thinks I'm crazy for even wanting Mexican... lol.

    There is this burrito place in GA called Willy's (it's like Moes... but so much freakin' better lol) and I want them to cater our wedding.... he won't even think of the idea. Ugh. Oh well...

    Cilantro is fantastic for tacos as well.

    Black beans, enchilada sauce (for those who have a problem with spicy salsa), mango or corn salsa (just for fuN!), chopped cilantro, lime wedges to squeeze

    Were having different stations one being a fajita station chicken, beef with all the fixins too. I think you've thought of it all. FH LOVES Mexican food will eat it everyday if I let him

    What if you put the fixin's in the middle of the table, on a lazy susan type thing, so people only have to get up to get the meat and stuff. and then can do the rest sitting. Not sure how expensive that would get, but I am sure someone rents things like that. I go to a chinese restaurant that has them in the middle of the table for sharing food, they're awesome!

    Thanks ladies!!! FH is the one that when I put out two choice, chose the taco bar... Makes it inexpensive (more money to spen on alcohol!!) and a great later evening dinner option! I truly enjoy all the input!

    We're planning a taco bar for our wedding and we're having a hard time finding any resources that help determine the appropriate amounts for ingredients. We have 150 guests. How did you two figure out these calculations? Any other tips on how it went for you? Anything you'd do differently? Thanks! Smiley smile

    It will help if you mention whether you want to prepare this yourself or get a vendor. Of course, if you want a vendor, you can call around to see who is available. As to getting a response to previous people in this thread, it is unlikely. Their weddings were a while ago. Prices would easily have doubled. If doing it yourself, do a small scale test at home. I ran across a taco seasoning recipe that seemed like a good idea, but i have not tried it.
