I didn't do that much direct contact with the bakery - we had assist from our coordinator on that front. It is challenging to coordinate this aspect long distance. You have to go on a whim and "guess" what flavors might be good. I only had 3 bites of the cake in total :( so didn't get to enjoy it. However, ALL of the guests commented on how great it tasted! They seemed especially impressed with the chocolate layer. We stuck with the basic cake flavors (cheaper than picking the fancier flavors) but it worked out fine. Next time in town, I will have to go back and try the different flavors.

I went in for a cake testing, and Mariam (the Mira Mesa Bakery) was EXTREMELY helpful! She had everything prepared, gave me suggestions, knew EVERYTHING about their cakes. Answered every single question and paid attention to every single little detail I needed on my cake. She reviewed her notes with me and made sure everything was correct. I called in a few times to add more details and they happily accepted the changes. They delivered the cake on time and it was BEAUTIFUL!

Customer Service: Dawson was awesome! He was very professional and provided top notch customer service anytime we called the bakery. Our first encounter was with the cake tasting--and every meeting since that was always pleasant.

The Cake: Delicious, delicious, delicious and beautiful, beautiful, beautiful. Need I say more? We were extremely pleased by the fact that the cost for our wedding cake was the most reasonable; other bakeries charge exorbitant amounts for their cakes. The delivery was prompt and they made it even more beautiful with the flowers from the florist (specifically for the cake).

Our wedding cake was made by Edelweiss Bakery and we were very satisfied with them. The tasting was a lot of fun and the people working at the bakery were very friendly and allowed us to take our time when trying out the different selections. Before we went to the tasting I told them we won't be doing chocolate so there was no need to bring out chocolate samples. The day of the tasting the remembered that request, so that was a good sign that they do listen to customer requests and tailor the tasting to what will suit us best. We were offered beverages of coffee, tea, or water during the tasting too which I thought was very nice.

When picking the cake they completely let me customize the cake to exactly how I wanted it to look. I loved the look of the base of cake A and the climbing cherry blossom on cake B. Instead of having to choose between one or the other, they combined the two looks into a new cake design. I was able to get the exact shades of purple on the cherry blossoms to match the theme of the wedding day, too.

And with the flavors of the cake: all were divine! Again, I couldn't decide on just one and they suggested doing a different layer for each flavor. Absolutely brilliant! So we had the bottom layer be vanilla sponge cake with Bavarian cream, the middle layer was vanilla sponge cake with lemon tart, and the top layer was carrot cake (my favorite). All the guests at the wedding raved how delicious the cake was. The carrot cake was heavenly!

My only critique was when the cake was delivered, there was a spot on the middle layer where the frosting got accidentally smudged. My maid of honor noticed it and asked the gentleman who was setting up the cake what happened. He apparently said he didn't know. So that was a bit odd, but at the end of the day it didn't ruin the cake.

we had some pretty bad tastings so when we came there we were very skeptical. We walked in and were excited immediately. the tasting was great and they were very helpful. Once I got all the cake off my face on my wedding day the cake was gone!!! everyone loved it! The only negative thing I can say was we order buttercream and got whip cream.
But who cares! Everyone loved it!!

We received amazing customer service when we went there for our tasting and the cake turned out just perfect. I'd highly recommend their marble pound cake to everyone!

the cake was really good, the lady helping me was nice, and the price was unbeatable. only downside was at one of my tastings, I saw a spider on the table, and the lady just dropped it on the floor!!!!!!!!!!!!

Didn't end up going with this bakery for our wedding cake, but I still give it a high recommendation! Went here for a cake tastings, they were flexible on the time, and gave us TONS of cake! Lots of flavors, and fillings. Many more options than a lot of places we went too. Plus, the cake was light and moist, important factors to me!

The customer service was good, the front shop is a little small and was crowded. We did go on a Saturday morning and there were several other tastings scheduled at the same time.

Don't let the tiny shop fool you, the cakes here are delicious and beautiful. We weren't sure of our guest list total the first two times we went in, but they were flexible enough to have a "deadline" that was just a few weeks from the wedding date; plenty of time to figure things out. We were able to pick multiple fillings and types of cake so that each tier was a little different. The cake your guests are served is NOT a sheet cake - they will all get a piece of the real, and delicious wedding cake. This was huge for us as we'd tasted some cake disasters at other people's weddings where sheet cakes were served in place of the wedding cake. Delivery on wedding day was timely and worry-free.

We ended up with Chocolate Cake w/Chocolate Mousse filling and White Cake w/Lemon filling, butter cream frosting, beautiful designs on the frosting. We both loved the cake, and got lots of compliments! I wish I had more to eat now ...

I loved that I was able to use any style I wanted. They have the best tasting red velvet cake I tasted in a while. They did a great job on the cake, but it wasn't perfect.... what can I expect though if I wanted a cake worth $6,000 for the price of a small wedding cake.... :) They are great.

Edelweiss was soooo sooo yummy! I seriously have been dreaming about our wedding cake since our wedding day! I want more! I ordered a 7 inch round butter pound cake with strawberry Bavarian cream and butter cream frosting. Then I ended up going the cupcake route and ordered a bunch of butter pound cupcakes and red velvet cupcakes. Some of my pictures show a lacking table as some of the guests were a bit clueless and started eating them during cocktail hour. I had a cake topper on our cake and everything… thank goodness they didn’t touch our cutting cake! One of my Bridesmaids caught people eating them and wrote please do not eat on a small plate and put it out. I only noticed the note on the plate. I never even noticed that there were many cupcakes missing from the amount we originally set up! Small snafu but no biggie! Every little inch of cake and cupcake was gone! So good! In hindsight I would have just sucked it up and ordered a larger cake. They didn’t even charge me until the Monday after the wedding. I will for sure be making trips to Edelweiss in the future too!

Edelwieiss is wonderful. I met with them a year before our wedding to do the cake testing and selections. I didnt speak with them again until a few weeks before the wedding. I made some minor adjustments to my selections and tada.....just like that my cake was set up at the ceremony. Perfection!!! It tasted fantastic.! I would highly recommend them for their fantastic service, kind staff and reasonable prices!!!

I can't even count how many compliments we received on our cake. It tasted delicious and looked beautiful. I was really worried about how the whole thing would turn out since we picked out a somewhat complicated design but it was awesome. I can't thank the Edelweiss Bakery enough.
