Tips and Advice

When working with a cake designer, always ask if they use butter or shortening in their buttercream. Bakers often use shortening because it has a higher melting point and is therefore easier to work with, but it leaves an icky film on the roof of your mouth. Buttercreams made with shortening also need a lot of sugar to give them flavor, and are usually cloyingly sweet. Butter has a lower melting point and is melt-in-your-mouth delicious. And, because butter has so much flavor, less sugar is needed.
