Testimonial Letter from a Bride: 2008 Wedding

Dear Nick (Chef Nicholas Calias),

I’ve dreamed about my wedding day for as long as I can remember. Never in a million years did I think my imagination would become reality. I have to be honest; in the beginning when we started to plan the wedding, food was not that important to me. I was more interested in the "details". I assumed food was food and that it would be presented the same way I had seen it at the dozen other weddings I’ve attended over the years. Don’t get me wrong, I had a binder full of cut outs on what I wished the food would look like, but assumed since I wasn’t a celebrity it wouldn’t be possible - I was wrong!

On April 19th, 2008 I was introduced to you at my food tasting. Your name quickly became the topic of my mom’s daily conversations from the first time she had met you and after five minutes I could see why. Your passion for food was shown the second the appetizers hit the table and I immediately became enthused!...I left that night not only with a new love for food but with certainty that my wedding was going to be outstanding! You kept in touch with me via e-mail/telephone the months preceding the wedding with all of your ideas. And although my mom was paying for the entire wedding you always consulted me about any decisions my mom may have made when I wasn’t present. My happiness was your #1 concern and that alone meant so much. Each time we spoke, I felt as though I was the only bride you were working with.

About a month before the wedding I met with you again to hear the final details of the "Chocolate Finale". Nothing could have prepared me for what I was about to hear - Chocolate Tacos (are you kidding me?) Mini Chocolate Burgers with Cinnamon French Fries (no way!), Chocolate Strawberry Caviar (wow), White Chocolate Soup with Grilled Mascarpone Panini’s...,Milk Shots with Chocolate Straw (this is sooo Hollywood) and the list continues...

Just days before my wedding and after much consideration we decided to spend the night prior to the wedding at The Colonnade Hotel - boy did we make the right choice! My mom called telling me I better hurry up and get there so I could check out my suite. I was greeted by name in the lobby with staff eager to grab my bags. Upon checking in I was asked when Bella (the "Dog of Honor") was going to arrive? I assured the staff that she would be there soon with her dad. How impressive! I made my way up to our room and it was incredible. Just what every Bride would want the night before her wedding. We ate dinner that night in Brasserie Jo and you stopped by our table and gave me a sneak peek at the dessert. I was extremely touched by your sincere wishes and thoughtfulness.

October 12th finally arrived, My Wedding Day... An unexpected surprise was awaiting my new husband and I as we exited the church - The entire street was blocked off allowing us to literally run up and down the street and capture once in a lifetime photos. This did, however, set us back for time and I was worried we wouldn’t make it back to The Colonnade before cocktail hour began. I wanted to see the room before the guests walked in. I arrived at 6:00 PM ... When I opened the doors to the Ballroom I had the reaction I had been hoping for - Astonishment! It was perfection (thanks Lois, Michael and Ann). We decided to join our guests at cocktail hour and I’m so happy we did as this was something that couldn’t be missed. I was approached several times just moments into the reception about how incredible the food was and how impressive the presentation was.

Everyone made their way into the ballroom and the six course extravaganza began. They say the bride and groom never sit long enough to enjoy the meal at their own wedding. This was not the case for us. The taste of the food and the unique presentation kept us both frozen in our seats with anticipation on what the next course would bring. As I looked at my mother, I knew that you exceeded even her expectations. But, what I will remember the most was how you came out after each course to make sure we were satisfied and happy. Thinking that I could not be overwhelmed more, your "Chocolate Creation" was the icing on the cake, chocolate cake that is. Your work of art had my guests lined up to take pictures even before they indulged in chocolate.

Every girls dream is to feel like a princess on her wedding day. You attended to my every need and turned a part of my wedding, that I had no interest in, into the highlight of the day. Three months have past, it isn’t the crystal, it isn’t the flowers, it’s the food that my guests are STILL talking about.

I asked myself later that night did I get a magazine wedding? The answer was no...I got better. In closing, not only were you responsible for giving me a fairytale wedding but you have also become a special person.
